Tigriss, for some, the point IS to go ape crazy. They wouldn't have it any other way. Like I told Poodlepet, crazy comes in all flavors. It's a flexible dish; too bad the minds that read it aren't.

How are things going with you at work? Are you okay?

Back to the dish, for my girlfriends potluck, I'm going to make it a low fat dish with less carbs and sodium. For the Holiday Potluck, it's going to be meaty. For my family, I'm going to use a simmer sauce, low fat cream cheese and many more vegetables.

I'm doing fine. It is the initial shock of being dumped on that is so upsetting. I won't be seeing that much of them since I'm not filling in and are back in my office. If I don't talk to them apart from business, then I can't get in trouble. This will pass with time. I've already deleted them from my phone and don't answer numbers I don't recognize, so they won't be getting answered. They will eventually get the message without me talking to them. They will certainly try it Saturday night when I fail to show for the department party and not answer the phone when the call.

As for the dish, I would caramelize the onions and peppers and add mushrooms too! This would be great with some different cheeses.

Tigriss, yes, it will pass. It's still a shame that you are faced with this.

Yum. That recipe sounds delicious. No buzz kill here. There are lots of ways to make it "yours" if you choose (fresh herbs, etc). My husband would love it as is. I may make it in one of my many Temp-tations bakeware pieces.

You know what I am dying to try? Over the summer, on a America's Test Kitchen or Cook's Country, they made homemade tater tots. They were a little time consuming, but not difficult to make.....can you imagine this recipe with those??? Of course, if I were to make them for this recipe, I would go whole hog! Poodlepet2

I had a ton of fresh herbs and didn't think to add them.

Do you shred the potatoes then form them? They would go so well with this recipe!

Oddly enough, you don't shred them. They had you cut the potatoes into one inch pieces, then you pulse them in the food processor so that they look like shards. (That's the only way I can describe it). I would really have to look this up, but you microwave them for about ten minutes(I didn't even think they would use such an appliance!). You cool them down, then add egg, flour and seasoning. You then pat it into a pan and let it thoroughly cool, cut little squares and deep fry. I adore onions and chives-oh yeah, I would certainly add those critters! Chanukah starts on the 16th, and I will make the usual latkes, but one night I am going to make these. I am going to double the batch and make your recipe......sometimes I feel like I'm in a rut, and this would be wonderful! Poodlepet2

I can see the microwave being used to soften the potatoes. onions, chives and dill would be good herbs to add!

When I was looking for a dish to use the Tater Tots in, I came across a lot of recipes for homemade ones and they didn't look easy. One took two days and needed constant attention!

You could even do this with left over ham or turkey and use cream of celery for additional flavor and again, i would add mushrooms because I love them! You could sneak in some veggies with peas and carrots if you want to sneak them in for the kids or hubby. Who couldn't eat them covered by all that goodness.
