I needed an easy, tasty breakfast dish for my step sons when they came over last week and they loved it. I got the basic recipe from Ore Ida (Cheesy Tater Tot Casserole) and modified it.

1 onion, diced

1 bell pepper, diced

1 bag of Tater Tots, frozen

2 cans of condensed soup (I used chicken and chicken with herbs)

2 cups of sour cream

1 block of cream cheese, softened

1 box of Stove Top

1/2 stick of butter, melted

Preheat the oven to 350.

Mix the onions, bell pepper and Tater Tots together and place in an oiled 13x9 baking dish.

Mix the soup, sour cream and cream cheese together and spread on top of the potato mixture.

Top with stuffing.

Drizzle butter over top of the stuffing.

Bake for 60-70 minutes.

That is not a meatless hot dish.

I was going to say the same thing....condensed soup "w/ chicken"?

And just READING the recipe, I really think my arteries started to seize up. That has to be at least 60-70% fat. EEPS!

Trying to understand the purpose of making it 'meatless'....to cut down on costs?

Yes, but this is a mom trying to make a nice dish for her sons. So many people post recipes on this forum that R so much worse. Just loaded with all fat & sugar. I'm very,very health conscious regarding fats & obesity. Just saying........................

Nope sids, I gave it that name because I left out the cheese from the original recipe. I didn't think about the chicken soup as meat.

I hope you have your defibrillator nearby!

Thank you sky, I'm glad you get it. This is so not a dish I would make for me and DH.

I did taste it when the boys were over and we sat down for breakfast. It was awesome!

But if your step sons are Ethical Vegans, a ruse was played when presenting this dish as "meatless".

My household eats vegetarians.

Again, I gave it that name because I left out the cheese from the original recipe. I had to call it something else and didn't consider chicken soup as meat.

You could use cream of mushroom or celery soup instead providing that they do eat dairy products. My niece in law is a vegetarian who also eats no dairy, cheese, milk, etc......... are all included on her no eat list..........we have a time with providing food that she will eat at family meals. Thankfully she usually brings a plate for herself and doesn't complain.
