@CelticCrafter Try using fat free Greek yoghurt to mash potatoes that have been boiled with fresh garlic cloves and a little salt.You could still put a small bit of butter on top of each serving if you think you need it.

That is just it. Things won't be the same, but you do get used to them.
I had gallbladder issues and needed to loose weight before I felt comfortable with having surgery. Also, fat can trigger gallbladder attacks.
So I went very low fat for a year and a half, to see if I could loose weight (I did, 135 pounds) and see if I could control the attacks with diet changes (I couldn't so I did have the surgery).
But the funny thing with food is that if you get off the 'the bad stuff' (what ever that is for each individual) long enough, you don't miss it so much. And when, after six months or so, try to eat something you absolutely loved, it just doesn't hold the same wonder that it once did.
The key to living with a big dietary change for life, is to find new things that you just love. And it can happen. Also allow yourself little treats, but in controlled circumstances (like have a piece of birthday cake at you granddaughter's birthday, but don't bring cake into your home where it tempts you daily).
Many of the things I loved and would eat way too much of, now don't taste all that great to me. I think we cleanse the palate, and develop a whole new taste for things.

Try using nonfat low sodium chicken broth to boil potatoes and Molly McButter flavor sprinkles. I use the broth also when cooking vegetables instead of water. Besides Mrs. Dash seasonings I have found Paul Prudhomme Magic Seasoning Salt Free to be very, very good. We use it when grilling or baking chicken, fish, vegetables--you name it. It is very flavorable! Also we use Olivio Spray butter made from olive oil. HTH.

We cannot live very well without a drop of fat. That is simply not healthy. We need healthy fats.

Hummm. But yet, we have the highest % of heart disease, T2 diabetes, obesity ever seen in the history of ever. Fat is killing us, but I digress.
Tell someone without a gallbladder to resume their high-fat diet.
See how that works out. Loose stools, rushing to the toilet.
Not a good way to live, IMO.

@CelticCrafter We eat low cholesterol and it is a healthy diet.There are lots of foods that are delicious without fat.I make oven roasted fries by cutting potatoes into strips and seasoning with garlic powder,onion powder,turmeric and a little salt.Then I add two capfuls of olive oil and mix well by hand.Roast in a hot oven turning after about 15 min...cook until they look brown and crispy.You can do any veg this way and yhey taste great.We eat chicken or fish in small portions...size of a palm of hand.I flatten boneless skinless breast and season with herb mixture,lemon juice and small sprinkle of sea salt and pepper...BBQ for three to four min on high and turn for another three.Then I add BBQ sauce and cook till brown and done.I like to squeeze fresh lemon on while it cooks too.

My husband had to have his gallbladder removed so I guess I have to learn to re-do certain things.
My gallbladder was removed and no one told me to eat differently. Everything gets processed, and believe me, there are plenty of fats. I have problems if I eat eggs three days in a row, but I'd had that problem for years before my gallbladder was out, and it's no worse now. Solution? Don't eat eggs three days in a row.
If your husband has problems digesting certain things now that he didn't before, that's a different matter. I would work on identifying what they are and make sure it's a consistent problem and not linked to other ingredients or a passing stomach or intestinal virus.
As someone else said, a diet completely free of fat is not a good thing and I can't see any trustworthy doctor recommending it.

I believe SUGAR is what's killing us. SUGAR comes from a plant, but it's really bad news for human beings, especially combined with flour and other processed plants.
