Another asparagus dish using 🍋 

 

Baked Asparagus with Lemon, Butter and Parmesan


Prep time: 10 mins Cook time: 15 mins Total time: 25 mins

Ingredients

2 bunches asparagus
1 lemon
4 Tbsp butter
Olive oil
Salt & Pepper
½ cup shredded Parmesan cheese


Instructions

Rinse 2 bunches of asparagus and break off the ends by holding the base end and snapping it wherever it snaps.


Place asparagus in a large baking dish, drizzle with olive oil and sprinkle lightly with salt and pepper.


Squeeze ½ of a lemon over the asparagus. Line the top third of the asparagus with lemon slices from the other half of your lemon (optional).


Thinly slice 4 tbsp of butter and line the center of the asparagus with butter.


Bake at 400°F for 12 minutes or until asparagus is tender. Remove asparagus from the oven and set oven to Broil.


Sprinkle the center of the asparagus with Parmesan cheese and broil 2-3 minutes or until cheese is melted and golden.

Uncle Ben's Wild Rice with Cranberries and Pecans

 

This side dish is so easy and tastes great!  I have made it for Thanksgiving because it can be made in advance, put aside, and then served at room temperature. 

 

1 package Uncle Ben's Wild Rice

 

Follow directions on box using chicken broth for liquid and 1/2 of the seasoning package.

 

Simmer, covered, for  20 minutes and then remove lid for five minutes

 

Let cool

 

To cooled rice add:

1/3 cup chopped celery

1/3 cup chopped green onions

1/2 cup dried cranberries

1/2 cup toasted pecans ( 350 oven for 6 minutes, break apart with hands)

3 Tablespoons olive oil

2 Tablespoons balsamic vinegar

salt and pepper to taste

 

Serve room temperature

Salisbury Steak
4 Servings

 

1 (10 3/4 oz.) can cream of mushroom soup, divided (undiluted)
1 lb. hamburger
1 cup Italian seasoned dry bread crumbs
1/2 cup chopped onion
1 egg, beaten
1 tsp. salt
pepper to taste
1 Tbsp. Worcestershire sauce
2 Tbsp. water
1 (8 oz.) can mushroom stems and pieces, drained

 

Combine 1/4 cup soup, ground beef, bread crumbs, onion, egg, salt and pepper in a large bowl; don't overmix. Shape into 4 patties and place in a greased 9-inch baking pan. Combine the remaining soup with Worcestershire sauce, water and mushrooms; spread the mixture evenly over the patties. Bake uncovered at 350° for 60 minutes.

 

Next Ingredient:  Evaporated milk

Sabatini.....we are into the March game now but thanks for posting!

 

I logged on to tell Bonanzajellybean the Honey Bourbon Steak Tip recipe she posted here was GREAT....LOVED IT!  Easy to fix and so tasty!
