15-Minute Sesame Noodles with Edamame

These 15-Minute Garlic Sesame Noodles are the perfect dish to whip up for a quick, healthy dinner. The creamy sesame sauce is made with tahini, garlic, and sesame oil - so it's vegan too! Ingredients

For the sauce:

  • ¼ cup soy sauce
  • 1 tablespoon maple syrup - or raw brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon tahini
  • ½ tablespoon peanut butter - note 1
  • 1 tablespoon rice vinegar
  • 1 tablespoon freshly grated ginger - or 1 teaspoon ground ginger
  • 2 cloves garlic - minced
  • ¼ teaspoon hot chili flakes - or ½ teaspoon sriracha

For the noodles:

  • 10 ounces uncooked noodles - note 2
  • ½ cup green onions - finely sliced
  • 1 tablespoon sesame seeds
  • 1 tablespoon peanuts - chopped (optional)
  • 1 cup edamame - defrosted, optional

Toppings:

  • Extra green onions
  • Sesame seeds

Instructions

  • Soak the noodles in hot water, following the packet directions.
  • Mix all the sauce ingredients in a small bowl or a jar until you get a smooth sauce.
  • Once the noodles are ready, drain, and rinse under tap water to prevent them from sticking together.
  • Place the noodles in a pan or a bowl and toss them with the sauce, sesame seeds, green onions, peanuts, and edamame.
  • Garnish with extra sesame seeds and green onions. Serve hot, warm, or at room temperature (see note 2).

Notes

Note 1: You can sub peanut butter for more tahini, but add an extra 1/2 tablespoon of maple syrup to contrast the bitterness of tahini.
 
Note 2: Choose any noodle to make this dish. Rice noodles, buckwheat noodles, ramen noodles, udon noodles, soba noodles, or even whole wheat pasta all work well.
 
Note 3: For a heartier dish, add some vegan protein such as cooked tofu, tempeh, or chickpeas.
 
How to Store: 
 
If you have leftovers, store them in an airtight container in the fridge. They will keep for up to four days. Reheat in the microwave or on the stovetop. Adding a bit of water will help loosen up the sauce.
 
 
You can also freeze garlic sesame noodles for up to two months. Pack up portions in individual containers or freezer-safe bags.

Here's another E recipe, because I just made one of these and it looks delicious.  I've seen other variations of this recipe, but I wasn't tempted to try it until I saw Katie Lee make it on a recent episode of The Kitchen.

No Bake Biegel Éclair Cake

3 (3.4 oz)  boxes instant French vanilla pudding

4 cups plus 1 to 2 tsp cold whole milk

1 (8 oz) tube whipped topping, thawed*

1 (14.4 oz) box graham crackers

1 (16 oz) container of chocolate frosting

 

  1. Combine the pudding and 4 cups milk in a bowl, then fold in the whipped topping.
  2. In a 9-by-13-inch pan, add one layer of graham crackers. Layer on half of the pudding mixture, then top with another layer of graham crackers. Repeat with the remaining pudding and graham crackers, finishing with the crackers.
  3. Transfer the frosting to a mixing bowl and add the remaining 1 to 2 teaspoons milk. Whisk until it thins enough to become easily spreadable.* Smooth over the top layer of graham crackers.
  4. Cover and refrigerate for 12 hours or overnight. This softens the graham crackers so they are easy to serve the next day.
  5. Spoon or slice and serve the cake. Store in the refrigerator, covered, for up to four days.

*I didn't have Cool Whip, so I added about a cup of freshly whipped cream.

*i misread the directions and microwaved the frosting for 30 seconds until it was pourable.

Fortune Cookie Magic Shell Sundae

Fortune cookies don’t really work for ice cream sandwiches, but that doesn’t mean that you shouldn’t eat them with ice cream. In contrast with chocolate or caramel versions, this fortune cookie magic shell carries the nostalgic toasted flavor of the perfectly bronzed cookies and has a crumbly chew that’s reminiscent of a Hershey’s Cookies ‘n’ Creme candy bar. You’ll need more than a few cookies to make this recipe (about 15, plus extra for topping), but they’re easy to find in in bulk at restaurant supply outlets or online. However you score your stash of fortune cookies, throwing them into a blender (sans fortunes) with a bit of melted coconut oil quickly turns the mixture into a pourable topping that transforms into a crisp “magic shell” once poured over ice cream. The “magic” is in the coconut oil. Because it’s almost solid at room temperature (and even more so when chilled), the mixture sets almost instantly as it hits the cold ice creaminto a perfectly thin veneer, ready to be shattered by a spoon. A light sprinkling of black sesame seeds emphasizes the slightly nutty flavor of the cookies, and flaky sea salt and broken pieces of fortune cookie add a layer of crunch.

Ingredients

4 servings

15 fortune cookies, fortunes removed, plus more crushed for serving
5 Tbsp. refined coconut oil, melted
¼ tsp. kosher salt
Vanilla ice cream (for serving)
Flaky sea salt
2 tsp. black sesame seeds

Preparation

  1. Step 1

    Blend 15 fortune cookies, fortunes removed, in a blender to a fine powder. Add 5 Tbsp. refined coconut oil, melted, and ¼ tsp. kosher salt and blend, scraping down sides of blender with a rubber spatula as needed, until combined.

    Step 2

    Place a scoop of vanilla ice cream in each bowl and coat with a thin layer of magic shell. Quickly top each with a few pieces of crushed fortune cookie, some flaky sea salt, and ½ tsp. black sesame seeds.

This is not a new recipe but one of my favorites....tasty and quick dinner meal...one dish! 👍

 

Chicken with Vegetables

 

3 Chicken Breasts, boneless and skinless

6 red potatoes, quartered

Fresh GREEN BEANS

 

Place chicken breasts in center of a 9x13" baking dish.  Cut GREEN BEANS and place on one side of chicken.  Place red potatoes on other side.  (Whatever works to place vegetables around the chicken.) 

 

Drizzle olive oil over all.  Sprinkle with Dry Italian Seasoning Salad Mix or Italian Seasoning.  

Cover and bake at 350 for 1 hour.

Have you jumped on the hot honey bandwagon? It's become very popular, even trendy.

"Mike's Hot Honey" seems to be the brand leader of the pack.

Hot honey can be used as a glaze, mixed w/ sour cream or mayo as a dipping sauce, drizzled over fried chicken, etc. & is most amazing on pizza!

You control the temperature by adding more or less chili flakes, honey or vinegar, or whether or not to strain the mixture.

I go heavy on the vinegar, but that's me, & keep my hot honey in a squeeze bottle in the cupboard.

 

Homemade Hot Honey Recipe   

  • 1 cup honey
  • 2 tablespoons chili flakes, or to taste
  • pinch of salt
  • 1 tablespoon apple cider or white vinegar

INSTRUCTIONS

 
  1. In a small saucepan, combine honey, chili flakes, and pinch of salt.
  2. Heat the mixture over medium heat until it comes to a simmer. Reduce heat to low and simmer for 5-10 minutes, stirring occasionally.
  3. Once the mixture has been infused with the chili flakes, remove it from the heat and let it cool for a few minutes. Stir in the apple cider vinegar.
  4. Pour the hot honey through a fine mesh strainer to remove the chili flakes, if desired. Store in a clean jar or bottle and keep at room temperature.

@sabatini @That looks so good! I love sweet and spicy and homemade is best. I love vinegar too so I'll be adding more. Thanks for such an interesting recipe!

Ingredients

  • 2 1/2 cups uncooked penne pasta
  • 24 oz Alfredo sauce
  • 1 cup kale chopped
  • 1 cup broccoli chopped
  • 1 cup carrots chopped
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp ground black pepper
  • 2 tsp Italian seasonings
  • 2/3 cup shredded colby and cheddar mix cheese
  • 1 1/2 cup mozzarella

Instructions

  • Cook the pasta until it is al dente' then drain it, and place the pasta in a bake dish.
  • Sprinkle in the garlic powder, Italian seasonings, onion powder, salt, and pepper. lightly toss the pasta.
  • Add in all of the vegetables, and fold in.
  • Pour the alfredo sauce over the pasta and vegetables, then stir in.
  • Sprinkle in the cheddar and colby mixed cheese, and mix the ingredients until everything is nicely incorporated.
  • Top the pasta off with the mozzarella cheese.
  • Optional, sprinkle parsley flakes on top of the mozzarella.
  • Bake the pasta, uncovered, on 350 F for 30 minutes.
  • Let sit for 5 minutes before digging in!
  • Enjoy with a nice green salad and bread sticks!

I know this is a little outta season for peaches...but gosh was this easy and delicious!

I froze some of the batch and it was fine.

 

I used Jim Beam Honey Bourbon!!

 

Bourbon, Peach and Ginger Jam

Recipe courtesy Damaris Phillips

Prep Time: 45 min                   Cook Time:  30 min   Serves:  2 quarts

Ingredients

32 ounces peeled and chopped peaches, frozen or fresh
1/2 cup sugar
4 tablespoons minced ginger
1/3 cup bourbon
1 tablespoon lemon juice
1/2 tablespoon lemon zest
1/2 tablespoon salt

Directions

In a saucepan over medium heat, combine the peaches, sugar and ginger.

Cook for 10 minutes, stirring every couple minutes.

Pour in the bourbon, lemon juice and zest.

Simmer until thickened, about 20 minutes.

Stir every couple minutes to prevent scorching.

Stir in the salt.

Store refrigerated for up to 1 month.

@house_cat ....yes, only the olive oil...I do a generous drizzle over all.....EASY recipe....dinner in one dish!  So good I probably fix too often but no complaints from DH..yet..😅.
