Double Peanut Crunch Cookies

I got this recipe from my mil and she can't remember where she got it. They are very good and have a nice chew to them, along with being crisp. They are not a thick cookie...they spread out.

Double Peanut Crunch Cookies



2 1/3 cups flour

1 tsp. baking soda

½ tsp. salt

1 cup (2 sticks) unsalted butter, softened

1 cup brown sugar

¾ cup granulated sugar

2 eggs

1 tsp. vanilla

1 cup unsalted peanuts, chopped ( or dry roasted)

½ of a 12 oz. bag of Reeses dark chocolate peanut butter cups (miniature)~ coarsely chopped (or use milk chocolate p.b. cups)

Heat oven to 325. In medium bowl, whisk together the flour soda and salt..set aside.

In large bowl, beat butter and sugars until fluffy (about 3 minutes) Beat in eggs and vanilla. Mix in flour mixture until just blended. Stir in peanuts and chocolate pb cups. Using an ice cream scoop ( ¼ cup), drop dough in mounds about 3 inches apart. Bake at 325 for 22 minutes or until crispy around edges and slightly golden.
