Cocoa Devil's Food Cake with Peanut Butter Frosting

I made this last year and just came across the recipes again.

Cocoa Devil's Food Cake with Peanut Butter Frosting

Cake:


1 1/4 c sugar
2/3 c solid vegetable shortening(
I used unsalted butter)
2 large eggs
1 1/2 c sifted all-purpose flour
3 T cocoa powder
1/4 t salt
1 1/4 t baking soda
1 c buttermilk
1 t vanilla extract

Preheat the oven to 350 deg F. Lightly grease and flour a 9 x 13 pan. Beat the sugar and shortening in a mixer until creamy. Add the eggs one at a time. Beat well on medium speed. Sift the flour, cocoa, salt, and baking soda together in a separate bowl. Add the flour mixture to the creamed mixture alternately with the buttermilk until evenly blended. Stir in the vanilla and beat again for 2 minutes. Pour into the prepared pan and bake for about 25 minutes.

Frosting:


Ma Moore's Deluxe Peanut Butter Frosting


5 T butter, softened
1 ½ cups plus 2 T powdered sugar;
I didn't use the extra 2 T
1/8 cup cocoa powder
1 tsp. vanilla
1 cup smooth peanut butter
½ cup milk;
I didn't use this much- maybe only ¼ cup


In a large bowl, mix the butter by hand with 1 ½ cups of the powdered sugar and cocoa. Stir in the vanilla. Add the peanut butter and mix until very creamy. Add the remaining 2, and up to 3, additional T of powdered sugar if necessary to achieve the desired consistency.
(I didn't mix by hand~ I did it all in KA mixer in order given.)

The cake isn't very chocolaty....it only has 3 T of cocoa. It is light in color, doesn't rise very high, maybe an inch or 1 1/2 inches, and is very moist. It is perfect with the peanut butter frosting- which is so good! Smile
