A friend of mine had a recipe for Bacon Jam. When I told her David Venable would have called it Divine Swine Jam she renamed the recipe. Here it is as she posted it on Facebook.

1 1/2 pounds GOOD Bacon
2 med onions, peeled and sliced thinly
3 cloves of garlic
1/4 C Cider vinegar
1/2 C Dark Brown Sugar
1/4 C GOOD QUALITY Maple Syrup
1/4 C boiled cider
3/4 C STRONG brewed coffee
2 dried bay leaves
Salt and Pepper to taste

Slice the bacon into 1" pieces and cook till well done, but not burned. Drain well. Put the bacon and the rest of the ingredients into a 2 qt or larger slow cooker. Cover and cook on high for 3-4 hours.

When done, fish out the bay leaves, then transfer everything to either a food processor or a blender. Pulse in small increments until you get the consistency you want. If the jam turns out to be too soupy for your liking, put it in a small sauce pan and cook over medium heat till it's where you want it. You can serve this warm with MANY different things or let it cool, seal it well and store in the refrigerator for 4-6 weeks.

This is very good on the inside of a grilled cheese sandwich.
