My organic farm sends me a box of produce every week, and I'm very grateful. This week the box included a pair of rhubarb stalks. Nowhere near enough for pie, even mixed with berries, which I now also realize is the only thing I ever learned to do with rhubarb. Any of you good cooks have a recipe for me? Maybe a savory rather than a sweet?

Roast with beets; 450 degree oven. Olive oil, S&P. 15-20 mintues. Cut up of course -both rhubarb & beets. Enjoy

Chop into 1" pieces and stew in a little water until soft about 10 minutes, sugar to taste and serve with some whipped cream.

If you don't have enough for a pie, strawberry rhubarb crumble is also delicious, and you can scale it to whatever size you want

Good ideas, thanks. Skylands, I would never have thought to roast with beets. In fact, although I love roasted veggies, I've never roasted beets. I guess it just seems so unlikely they would ever get done! Do you slice them? Or thin wedges? And do they cook the same length of time? I'm dying to try this. Yummo.

Roasted beets are the best!!!! Yummy! They are so sweet this way.

Slice them, thin, no more than a quarter inch, or they take too long to roast. No need to peel them. Just slice the root end & top off. Toss in a bowl with olive oil & S&P, roast for ~ 20 minutes at 450.

The other way with the rhubarb. I quarter the beets (use small beets) and cut large chunks of rhubarb.

Simmer chopped rhubarb in a little sugar, mix in some sliced strawberries and serve warm over vanilla ice cream.
