pork chops and kraut

 

old standby for me. 

season chops with seasoning of choice. place in hot skillet with some olive oil. throw in a chopped onion, and brown quickly on both sides.  add in a can of sauerkraut, juice and all, caraway seeds (a big pinch) i like minced garlic as well. cover turn down low and let cook for 20 or 30 minutes till pork is cooked through.  good with hot micrwaved apple slices with cinnamon, and a dark rye bread.

Crazy Amish Coconut Pie

 (Thuis recipe was demonwtrated on the You Tube channel of Simply Sara Kitchen.  It's so easy to make and it's very tasty).

 

In a blender add:

                2 cups milk

                ½ cup flour

                ½ stick melted butter

                1 tsp vanilla instant pudding dry mix

                1 tsp coconut extract

                4 large eggs

                1 cup sugar

                Pinch of salt

                1 cup coconut flakes

 

Blend for a minute or so

 

Place blended mixture in a greased (coconut oil) 10 inch pie plate and into a 350° oven for about 45 minutes

 

Will puff up and sink as it cools; will be a bit jiggly but does set as it sits and cools

 

Good served with whipped cream or plain

 

(Called CRAZY Amish Coconut Pie because it makes its own crust and is crazy good!)

Blackberry and Lemon
Cheesecake Topping
 
Ingredients

One 13-ounce jar blackberry jam

1 teaspoon lemon zest plus 1 teaspoon lemon juice, plus more zest for garnish

12 mini cheesecakes

12 blackberries, halved 

Directions
  1. Put the blackberry jam in a small mixing bowl and stir in the lemon zest and juice.
  2. Arrange the cheesecakes on a serving platter. Pour 1 tablespoon of the fruit topping on top of each cheesecake. Add 2 blackberry halves on top of each cheesecake and sprinkle with lemon zest. Serve immediately.

Next ingredient:  sliced deli meat, any kind

Reuben Soup

 

Ingredients

 

1/2 cup chopped onion

1/2 cup sliced celery

2 tablespoons butter

1 cup chicken broth

1/2 teaspoon baking soda

2 tablespoons cornstarch

2 tablespoons water

3/4 cup sauerkraut, rinsed and drained

2 cups half-and-half cream

2 cups chopped Deli corned beef

1 cup (4 ounces) shredded Swiss cheese

Salt and pepper to taste

Rye croutons, optional

 

In a large saucepan, saute onion and celery in butter until tender.

Add broth and baking soda.

Combine cornstarch and water until smooth; gradually add to pan.

Bring to a boil; cook and stir for 2 minutes or until thickened.

Reduce heat. Add sauerkraut, cream and corned beef; simmer and stir for 15 minutes.

Add cheese; heat until melted.

Add salt and pepper.  **ADDITIONAL SALT OPTIONAL.  DELI CB CAN BE SALTY

Garnish with croutons if desired.

VELVEETA® Salsa Dip

 

lb. (16 oz.) VELVEETA®, cut into 1/2-inch cubes

cup TACO BELL® Thick & Chunky Salsa

 

Mix ingredients in microwaveable bowl.

 

 Microwave on HIGH 5 min. or until VELVEETA is completely melted, stirring after 3 min.

This is a recipe for a Swedish dish called kalpudding that I hope to prepare soon. My interest was piqued in this because I have never eaten cabbage that's been caramelized.  Recipe was from nytimes.com

 

Meatloaf With Caramelized Cabbage

For the meatloaf:

  • 2 TBS plus 1 tsp unsalted butter
  • 1 head green cabbage, approximately 3 lbs, cored and shredded
  • 3 TBS molasses
  • Kosher salt and freshly ground pepper, to taste
  • ¾ lb ground beef
  • ¾ lb ground pork
  • 1 small yellow onion, peeled and chopped
  • 1 cup heavy cream
  • 4 TBS breadcrumbs
  • ⅓ cup chicken, beef or vegetable stock, ideally homemade or low-sodium store-bought (or water)

For the sauce:

  • ⅓ cup lingonberry preserves **CAN SUB CRANBERRY SAUCE
  • 1 TBS red-wine vinegar
  • 1 TBS unsalted butter
  • 1 tsp Worcestershire sauce, or to taste
  1. Heat oven to 350°. Put a large pan over medium-high heat, and add the butter. When it starts to foam, add the cabbage and molasses, lower the heat to medium and sprinkle with salt. Cook slowly, stirring often, until all the liquid has evaporated and the cabbage is caramelized, approximately 20-25 minutes.
  2. While the cabbage is cooking, lightly mix the meats in a large bowl, then add the onion, cream and breadcrumbs, and mix again to combine.
  3. When the cabbage is done, add about a third of it to the meat mixture, and mix to combine. Use the remaining butter to grease an 8-inch-square baking pan, and transfer the meat mixture to it, spreading it out to cover the whole surface evenly. Spread remaining cabbage over the meat, pour the stock or water over the top and place in the oven, on a sheet tray, to cook for approximately 40 to 45 minutes, or until the cabbage is very, very caramelized, almost dry and crunchy at the edges. Allow it to sit for 10 minutes or so before serving.
  4. While the meat and cabbage cooks, make the sauce. Heat lingonberry preserves, (or cranberry sauce), vinegar and butter in a small pot set over medium heat, then add Worcestershire sauce to taste. Serve alongside the meat/cabbasge.

SAUSAGE, Beans, Broccoli Soup

2 tbsp Olive oil, 1 lb sweet SAUSAGE, 1 medium onion chopped, 1 carrot chopped, 1-2 sweet potatoes diced, small pcs., 2 cloves garlic chopped, 1 bay leaf, 2 cans white beans, drained, 4 cups chopped broccoli rabe and greens, (opt.1cup spinach) 2 quarts chicken stock, 3/4 cup pasta shells, any kind grated cheese you like.

Heat soup pot on med-high heat. Add the oil, sausage and brown. Add the vegetables, potatoes, garlic, bay leaf and beans. Season with salt and pepper. Cook 5 minutes or so, so the vegetables begin to soften. Add broccoli rabe and let it wilt. If you choose to also use spinach, put it in now. Add the stock and cover the pot. Raise the heat and bring to a boil.. Reduce heat to simmer, add pasta, simmer and cook 20 or so.

 

NEXT INGREDIENT: PEANUT or ALMOND BUTTER

 

Just realized, I forgot to say, remove the Bay Leaf before eating!

Almond Butter Blossoms

Ingredients:

1/2 cup butter or shortening

1/2 cup almond butter

1/2 cup brown sugar

1 egg

2 Tbsp milk

1 tsp vanilla extract

1  3/4 cup flour

1 tsp baking soda

1/2 tsp salt

1/4 cup white sugar (for rolling the cookies)

1 bag of Hershey's kisses

 

Preheat oven to 375 degrees F.  Line baking sheets with parchment paper.

 

Cream together butter or shortening, almond butter and the 1/2 cups of brown and white sugar.  Add the egg, milk, and vanillabextract.

 

In a separate bowl whisk together flour, salt, and baking soda.  Add to liquid assemblage above until well incorporated.

 

Scoop 1 Tbsp of mixture and shape into a ball.  Roll in the 1/4 cup of reserved white sugar.  Place balls 2 inches apart on prepared baking sheets.  Bake for 10 minutes.  Remove from oven and immediately press a kiss into the top of each cookie.   Remove from baking sheets. Allow them to cool completely.  Kisses will harden.

 

NEXT INGREDIENT:  SOY SAUCE or other ASIAN SAUCE or CONDIMENT

This is my favorite way to use leftover pork tenderloin or chicken.  

Note: I double the sauce and sometimes use angel hair pasta if I don't have asian noodles.

It's a favorite around here.

 

Chow Mein

Recipe from Pioneer Woman

Ingredients

8 ounces thin lo mein noodles

1 tablespoon peanut oil 

1 carrot, julienned 

1/2 head napa cabbage, sliced thin 

1/2 onion, sliced 

1/4 cup chicken broth 

1/4 cup low-sodium soy sauce 

1 teaspoon sesame oil 

Sliced green onions, for topping

Directions
 
  1. Bring a pot of water to a boil and cook the noodles according to the package directions. Drain and set aside.
  2. Heat a skillet over medium-high heat and add the peanut oil. Add the carrots, cabbage and onions and cook for 1 minute. Add the chicken broth, soy sauce and sesame oil, then toss in the noodles. Top with sliced green onions.

Next ingredient:  sprinkles, jimmies or sparkles!

It looks like I stopped this game in its tracks.... so I'll respond to my own post!

 

I don't know what these cookies are actually called, but my dad made them every Christmas, so we call them ...

 

Pop's Round White Sprinkle Cookies

 

4 c flour

6 eggs

1 1/2 sticks softened butter

1 c sugar

1 1/2 tsp anise flavoring (lemon extract is a good alt)

6 tsp baking powder

 

Cream the butter, sugar, eggs and anise. 

Add the dry ingredients.

Use a small cookie scoop to drop the dough onto baking sheet.

Bake at

325° for about 10 minutes.

The tops of the cookies should be pale and the bottoms just barely browned.

Cool on a wire rack.

Brush on a glaze of confectioner's sugar/water. You can dip them in the glaze if you'd prefer.

Add sprinkles while the glaze is still wet.  We use the tiny little, crunchy, ball-like sprinkles.
