@SharkE. These sound delectable; no wonder they give you flowers at the grocery store. You're probably their primary source of revenue.
Do you have a cookie spatula? Mom had one and I looked for one for years. Finally saw one on Zulily a couple months ago and snatched one up. Indispensable for cookie baking.

husbands favorite type. I haven't made yet. Have made another version and he just likes that type.

My recipe for this type of cookie calls for cocoa and brown sugar:
2 cups flour
1/2 cup cocoa
2 tsp baking powder
1/2 tsp salt
4 4-oz Ghirardelli 60% Cacao Bittersweet Chocolate Baking Bars, chopped
4 eggs
2 tsp vanilla
10 tbsp room-temperature butter
1 1/2 cups brown sugar
1/2 cup sugar
1 1/2 cups semisweet chocolate chips
Whisk together flour, cocoa, baking powder, and salt in bowl.
Melt chopped chocolate in microwave at 50% power for 2 minutes, then stir and microwave at 20 second intervals until melted. Lightly beat together eggs and vanilla in small bowl.
Beat butter with hand mixer until smooth and creamy. Beat in sugars to combine. Beat in egg mixture on low speed. Beat in chocolate in steady stream to combine. Mix in flour/cocoa mixture on low speed to combine. Stir in chocolate chips. Cover with plastic wrap and let stand at room temperature for 1/2 hour.
Place 1 1/2" balls of dough on parchment-lined baking sheet spaced 1 1/2" apart. Bake in 350 degree oven until edges just start to set but centers are very soft, 10-11 minutes. Cool on sheet for 5 minutes, then cool completely on rack.

@SharkE. Mine is very similar to this one from Amazon. The blade is very thin, paper thin, and the metal is extremely flexible so you can easily scoop up thin fragile cookies.
