Anyone want to do a Christmas Cookie collection of recipes this year?

 

 

Anyone can start it, I thought it would be interesting to see different parts of country and what is being made.

@Mistreatedbycs  I think it's a great idea!  I haven't baked cookies in forever, and since it's just DH and I, when I have a yen for something sweet, I buy Costco's raspberry cookies. I freeze most of them, and get a couple out now and then.
Anyone else a fan of these cookies?

 

It will be fun and interesting to see the responses.

Wedding Cookies:

 

16 tbsp softened butter

2 cups powdered sugar

2 tsp vanilla

1/2 tsp salt

3/4 cup almond flour

2 1/4 cups flour

 

Beat butter, 1/2 cup powdered sugar, vanilla, and salt in big bowl with electric mixer.

Beat in almond flour.  Beat in flour.

Roll into 1" balls and place an inch apart on parchment-lined baking sheet.

Bake at 325 degrees until edges start to lightly brown, 15-20 minutes.

Let cool for a few minutes.

Roll warm cookies in dish of 1 1/2 cups powdered sugar.  Place on rack to cool.

Re-roll cooled cookies in dish of remaining powdered sugar until completely coated.

I bought those Costco raspberry cookies for the night before my daugher's wedding last month.  They are delicious.  I am a baker but didn't have to bake that week.  Wonderful cookie.

I make something similar without almond flour and add pecans. They are called Russian Snowballs.  

 

Jimmy the Baker makes something similar he calls Meltaways with pecans or walnuts.  They are very good.  M56980

@Foxxee  I too make something similar, but without the almond flour and use walnuts.  Recipe out of a very old Betty Crocker cookbook and it's called Russian tea cakes.

 

I am sure there are dozens of variations, and all delicious no doubt.

@Redsoxmom1  aren't those cookies the best?  I always keep them on hand and they freeze beautifully!

What type of raspberry Costco cookie is it?  I asked my daughter to look for it.  I am still making some of my grandmothers cookies and I am 70.  Grandkids like the Super shooter Christmas trees!  I will post some.

my mother made those wedding cookies with walnuts, and no almond flour back in the day.  We called them “butter balls” and they are addictive.  We still make them 50 years later!. Yum.
