I love salad, but I can't seem to keep lettuce between grocery visits. I did get a head of cauliflower and I like it raw. I use it to stretch out the lettuce, it adds a nice crunch.  I have also found that iceberg lettuce lasts longer than my usual butter lettuce in a bag. Green peppers work too.  What are you putting in your salad these days. 🥗🥬🍅🥒🥕

@QVCkitty1 I'm not eating salads these days. Too much washing and rewashing. I steam all my veggies lately. Also, I make a lot of sauteed kale and broccoli rabe. Lettuce has fiber and liquid, but not many nutrients. I like raw cauliflower, but I've been either steaming or roasting it.

...broccoli, carrots, mushrooms  and cabbage (to name a few) and always tomatoes.

Recently tried to julienne fresh veggies for stir fry and munch on them - delicious - so now I toss them in salads.

Since I don’t eat meat I kick up the protein at times with cheeses and boiled eggs and nuts.

@QVCkitty1 I'll add to @Spacrazy 's list.

 

I also add broccoli slaw (that's the julienne cut broccoli stalks), snow peas, and cubes of yellow squash and zucchini.  Occasionally, I'll quarter fresh Brussels sprouts and use spring onions.  I also keep a little frozen corn kernels, and sometimes I'll put a pinch of that in.

I have an insanely delicious recipe for cauliflower done in the microwave with different soups and cheddar as a vegetables if you want it.  I'll have to look it up.  It was when microwaves were just beginning to be used, and this was one example from the Junior League, Rochester, NY.

Just a tip on keeping lettuce fresher longer.  I read recently that placing a piece of paper towel on top of the lettuce in the fridge will help it keep fresh.  I was doubtful, but tried it and it does seem to help it last a few days longer.  

 

I love red peppers (and as a bonus, they have even more vitamin C than oranges) and put them, along with feta cheese, green and black olives, tomatoes and onions in my salad.   Very good with garlic infused olive oil I recently discovered.

@QVCkitty1   lock'n'lock has a product that out that came as a set of two large square boxes, with a grates on the bottom.  the larger one would fix the large size of salad greens. i can keep most letteces fresh for almost 2 weeks. the spring greens (my favorite) will last a good week. HTH
