4 cups cantaloupe cut or scooped into bite size pieces
1/4 cup thinly sliced red onion
1/2 cup of feta cheese, crumbled
1 T of thinly sliced mint
Juice of one large lime
1 T olive oil
Salt and pepper to taste

 

Whisk olive oil and lime juice together.  Toss everything together.

The name sounds curious.  The ingredients seems like they go together.  I think I will tey it.  I do not care for mint, but on this case I think a little will be good. Thanks

Oh my gosh, that sounds good!  I love fruit and I love salads and I really like the two mixed together, I will have to try this!  Thank you!

I think onions and cantaloupe sound a bit strange mixed together.

@DiAnneIs this best if it marinates for an hour or two in the refrigerator? If sounds delish!

It does not need to marinate.  I just serve it right away.  Hope you like it.

You can always leave the onions out.  Fresh lime juice just squeezed over any melon is delicious.

Thanks @DiAnne for the info on substituting the onions...I don't do onions but I love cantaloupe!!!

I make this exact salad with watermellon.  Never thought to try it with cantaloupe!  Great idea! 

 

The onions are surprisingly delicious in this and I am not a big raw onion eater.  I use red (purple) and just slice them very thin and don't use too much.

 

Feta, mint and fruit is one of my favs!
