1 english muffin
2 slices cheese (cheddar, colby, swiss, etc)
2 tomato slices

2 avocado slices
1 egg
Drizzle of balsamic glaze
Chopped fresh basil for garnish

 

Pre heat oven to 400.

 

Toast the english muffin until crispy in the toaster.  Put cheese slices on muffin and put into oven until cheese melts.

 

Place tomato slices on muffin halves, add avocado slices.

 

Cook egg (over easy or poached).  Place egg on half of muffin.  Drizzle glaze over both halves.  Garnish with chopped fresh basil.  

 

My neighbor gave me this idea and I have become a little obsessed with it - I have had it for breakfast and dinner a few times.  I tried it with scrambled eggs so that you could pick it up and eat it but I did not like as well.  I have tried cheddar cheese and swiss - I prefer swiss.  The balsamic glaze you can make or purchase.  I use Nonna Pias's Balsamic Glaze - I think I got it at Trader Joe's.

I THANK your neighbor!!! Avocado toast is on my breakfast menu at least 3 days per week-sometimes more.This seems like a delicious alternative, and I am really looking forward to trying it.😊

I think I would do this with cheese, tomato, and avocado on one side only.  Then some egg that is semi hard cooked.  Then I could pick it up like a typical sandwich.   I'd make one for DH without the avocado. Combo sounds nummy.

I tried it with lightly scrambled eggs but the balsamic glaze drizzle also made a mess.  I liked the taste of the runny yolk as a sauce so for me it is a knife and fork!
