Pea Salad
Prep Time: 15 Minutes Difficulty: Easy Servings: 12 Servings
Ingredients
  • 1/3 cup Sour Cream
  • 1 Tablespoon Mayonnaise
  • Salt And Pepper
  • 1 Tablespoon White Vinegar
  • 4 cups Frozen Green Peas, Almost Totally Thawed
  • 8 slices Bacon, Cooked Until Crisp And Chopped
  • 1/2 whole Small Red Onion, Halved And Sliced Very Thin
  • 6 ounces, weight Cheddar Or American Cheese, Cut Into Small Cubes
  • 3 Tablespoons Minced Fresh Parsley
Instructions
Mix the sour cream, mayonnaise, salt, pepper, and vinegar together to make the dressing. Add more salt and pepper to taste.

Stir 2/3 of the dressing into the peas until the peas are coated. Gently stir in the bacon, onion, cheese, and parsley until all combined. Taste and adjust seasonings. Cover with plastic wrap and refrigerate 2 to 4 hours before serving. (Pop the extra dressing in the fridge, too.)

Remove from the fridge and stir in the rest of the dressing to your liking. Sprinkle with more parsley before serving.

Brings back childhood memories!

My birthday is the end of March, if Easter was early, I would get a snowman cake, if late, a bunny cake.

 

I was raised in the northeast, an early Easter could be COLD!

 

It's really not that complicated to make.

Your meal sounds wonderful!

Now we should challenge everyone to include a pic on Apr 22

 

I have the smaller size Ronco Rotisserie, I love it.   I've never tried a prime rib, I would eat it all,  my family likes all their beef well done.

 

I do mostly chicken, either a whole or leg quarters in the included basket.

So far the 2 of us so I do know I will make potato salad, deviled eggs, salad or peas but either ham steak or something on the grill. Hope to eat early so I can take a nap later.

I'm leaning toward brown sugar spiral cut ham.  The problem is, I love potato salad and deviled eggs.  I also am wanting an amazing corn souffle I do which I could eat the entire thing!

  I will not have two starches in one meal.  Whatever, we'll have glazed carrots and fresh green beans.

 

I'd love to do roasted vegies, but they have their traditional meal in mind, lol!  I'll do roasted vegies one evening.

 

I think dessert will be Lemon Meringue pie.
