Crispy Breaded Pork Chops

  • 2 boneless pork chops about 13/4" thick
     
    salt and pepper to taste

Breading mixture

  • ¾ Cup  breadcrumbs or
    Seasoned Panko (omit other ingredients)
  • ½ tsp  salt
  • ½ tsp paprika
  • ¼ tsp black pepper
  • ¼ tsp garlic powder

  • ¼ Cup Duke’s mayonnaise

Prepare:

Preheat oven to 425°F and line a rimmed baking sheet with foil or parchment paper.  Set aside.

Dry pork chops well with paper towels and season lightly with salt and pepper, to taste.

Make breading mixture

In a shallow bowl, combine breadcrumbs, paprika, black pepper, garlic powder, onion powder and Parmesan cheese.  Stir to combine well.

Spread a thin layer of mayonnaise on one side of a pork chop, then add, mayo side down, to the breadcrumb mixture.  Press gently to coat well.
Spread another thin layer of mayonnaise on the other side of the pork chop and sprinkle with breadcrumb mixture, pressing gently to adhere.  

Bake:  Once all chops are on the baking sheet, spray pork with cooking spray, and bake for 18-20 minutes, or until pork has reached an internal temperature of 145°F. 
Let pork chops rest a few minutes, then serve!

Pan fry:  No changes needed to ingredients.

Add vegetable or peanut oil to a large heavy bottomed skillet, enough to be about 1/4" deep, over MED/MED HIGH heat.  Once oil is hot, add breaded pork chops (don't overcrowd the pan), and fry for 5-6 minutes per side, or until cooked through to an internal temperature of between 140-145°F.

 

Made these last week and they were the best chops I have ever eaten!  My son thought so also!

 

Next ingredient:  Beef (in a sauce) for noodles or rice.

I just received this recipe in my email a couple of days ago so I haven't made it yet.  Seems easy enough to prepare and looks to be a tasty comfort food.

 

Philly's Best Pasta Bake   (Serves: 6)

Ingredients
• 2 cups uncooked elbow macaroni
• 1/4 cup butter, cubed
•1/2 lb fresh mushrooms, sliced
• 1 medium onion, chopped
• 1 medium green bell pepper, chopped 
• 1/4 cup all-purpose flour
• 1 cup milk, 2%
• 1 cup beef broth 
• 2 cups provolone cheese, shredded
• 2 cups part-skim mozzarella cheese, shredded
• 1 tsp garlic powder
• 1 tsp Montreal steak seasoning
• 1/2 tsp onion powder
• 1 (10.5oz) pkg frozen sliced steaks, browned [ie, Steakum]

• 1/2 cup french-fried onions

 

Directions
Preheat oven to 350° F. 

Equipment needed: UNgreased 9X13 baking dish

 

Cook macaroni per pkg directions; drain.

 

In large skillet, melt butter over med heat.  Sauté mushrooms →→ bell pepper until tender, ~ 4-5 min.

 

Stir in flour until blended.  Gradually add milk & broth.  Bring mixture to a boil and cook, stirring, until thickened, ~ 2 min.

 

Reduce heat to low.  Stir in cheeses →→ onion powder.  Add macaroni to mixture.  Stir in sliced steak; transfer to baking dish.  Sprinkle fried onions atop pasta bake.

 

Bake until bubbly,  ~ 25-30 min.  Serve hot.

 For those who remember LilBitMissty here, she posted this recipe several years ago.  It is easy and very good.  Something different from Italian Meatballs and Spaghetti Sauce.

 

Cranberry Meatballs

 

2 lbs. ground beef

2 eggs

1 cup Italian-style BREADCRUMBS

1/2 teaspoon pepper

1/3 cup ketchup

1 tablespoon onion, minced

 

Mix and form meatballs; place in baking dish.  Set aside. Preheat oven to 350 degrees.  Make sauce.

Sauce:  1 can whole cranberry sauce

             1 12 oz. bottle chili sauce

             1/3 cup brown sugar

 

Mix and heat in a saucepan.  Pour over meatballs.  Bake for 30-35 minutes.  Serve over rice or pasta.

@walker  I've been making that recipe for more than 35 years now. It's great and so easy. The only difference in the sauce, I use Grape Jelly instead of the brown sugar.

Are we stuck on Paprika?  Here is a recipe that can be fixed in oven if you can't grill.  Sometimes I just cut recipe in half if using one rack of ribs.  I did not add cayenne pepper.  It is a Ree Drummond recipe.  Easy and good.

 

Brown Sugar Ribs

 

3/4 cup packed brown sugar

2 tablespoons PAPRIKA

2 tablespoons kosher salt

2 teaspoons cayenne pepper

2 teaspoons pepper

2 cloves garlic, minced

2 oranges, juiced

2 racks baby back ribs (pork ribs) cut into 2-rib pieces

 

Preheat oven to 325 degrees.  Mix together brown sugar, PAPRIKA, salt, cayenne, pepper, garlic and orange juice in large bowl.  Add ribs and toss until coated evenly.

 

Cut an aluminum foil sheet that is 18" wide and 24" long and place on top of a baking sheet.  Place ribs mixture onto the foil with any extra juices from bowl.  Fold ends over the ribs, followed by sides and seal tightly to completely enclose.  Bake until very tender...about 2 hours.

You want me to do what to the "Buttered Noodles"

“After years of eating at Good and Plenty and Plain and Fancy in Lancaster County my mother finally worked up the courage to ask the waitress how they make the buttered noodles. - Just burn the butter. I know it sounds weird but this has become our family's favorite way to prepare buttered noodles." 

 

INGREDIENTS

  • (12 ounce) package egg noodles
  • 12 Cup butter

DIRECTIONS

  • Boil water and prepare noodles as directed on the package.
  •  
  • In a saucepan melt butter. Once the butter is melted stir and watch. Once the butter begins to turn golden and then brown. Wait until the butter has turned medium to dark brown and take off of heat.  IT WILL BURN UP!

  • Drain noodles and pour butter over them.
  • The butter will sizzle when it hits the noodles. There will be little brown flecks on the noodles (this is the yummy part).  Enjoy!

Buttered noodles is one of my go-to recipes whenever DH is out of town.  Sometimes I sprinkle some Parmesan cheese, but more often I don't even bother.

@Zhills  When our kids were young, we used to go to an Amish farm in Lancaster where the family opened their house for dinner to the public once in a while. The mom always served what my daughter called "Burnt Butter Noodles." People just don't know how good this is until they try it!

Thyme Tea

 

Thyme tea requires just two ingredients: fresh thyme and water! You’ll be amazed at the amount of flavor that comes from just two ingredients. Thyme adds an herby intrigue that’s cozy and satisfying. This recipe is best to make in the summer when you’ve got lots of herbs in your garden or in pots. Of course, you can still make it in the winter using fresh thyme from the grocery store. Here’s how to make thyme tea:

  1. Boil: Boil a pot of water. 
  2. Harvest herbs: Add 8 to 10 fresh thyme sprigs to a mug.
  3. Steep: Pour on the water. The exact quantity doesn’t matter: just fill up the mug! Allow to stand for 5 minutes, then enjoy!

Side Note:

Thyme (Thymus vulgaris) is an herb with a distinct smell. The flowers, leaves, and oil are commonly used to flavor foods and are also used as medicine.

Thyme contains chemicals that might help bacterial and fungal infections. It also might help relieve coughing and have antioxidant effects.

 


People commonly use thyme for cough, patchy hair loss, dementia and many other conditions, but there is no good scientific evidence to support these uses.

@Zhills .....SOS!!!!  I was planning on fixing your pork chop recipe tonight.  I checked back on recipe and notice you mention onion powder and Parmesan cheese but I don't see them on ingredient list.  Also, I will be using Seasoned Panko....so I just eliminate all the extras except salt and pepper, right?   Thanks!
