Devil's Steak Sauce

 

Ingredients

  • 2 tablespoons raspberry jam
  • 2 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato sauce
  • 2 tablespoons malt vinegar
  • 5 drops hot pepper sauce
  • salt and freshly ground black pepper to taste

Directions

  1. In a saucepan over high heat, blend raspberry jam, brown sugar, Worcestershire sauce, tomato sauce, malt vinegar, hot pepper sauce, salt, and pepper. Bring to a boil over high heat, reduce heat to low, and simmer 10 minutes, or until thickened.

Sesame Green Beans

Ingredients:

1 tablespoon canola oil

1 1/2 teaspoons sesame oil (I prefer toasted) 

1 pound fresh green beans, washed

1 tablespoon soy sauce

1 tablespoon toasted sesame seeds

 

Directions

Warm a large skillet or wok over medium heat. When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil. Cook until the beans are bright green and slightly browned in spots, about 10 minutes. Remove from heat, and stir in soy sauce; cover, and let sit about 5 minutes. Transfer to a serving platter, and sprinkle with toasted sesame seeds.

French Vanilla Pudding Fruit Salad

Adapted from Plain Chicken   Serves: 8 

 

Ingredients:

2 (20oz) cans pineapple chunks, drained (reserve juice)

1 (11oz) can mandarin oranges, drained

1 (10oz) jar maraschino cherries, drained and chopped

2 bananas, peeled and sliced*

1½ cups blueberries

1 cup chopped strawberries

1 cup pecans chopped

1 (3.4oz) box French vanilla instant pudding

1 cup reserved pineapple juice

Fresh mint leaves to garnish- optional

*Toss bananas in citrus juice & drain before adding to salad to prevent browning.

 

Directions: 

Combine all fruit in a large bowl. Whisk together dry pudding mix & reserved juice; pour over fruit & mix well. Cover & refrigerate until ready to serve.

 

Stir salad before serving.

 

Note:

Frozen fruit like berries, thawed, can be subbed in this dessert recipe; also chopped canned peaches. Great served over pound cake.

Air-Fryer Crispy Curry Drumsticks

from Taste of Home

 

  • 1 pound chicken drumsticks
  • 3/4 teaspoon salt, divided
  • 2 tablespoons olive oil
  • 2 teaspoons curry powder
  • 1/2 teaspoon onion salt
  • 1/2 teaspoon garlic powder
  • Minced fresh cilantro, optional

 

  1. Place chicken in a large bowl; add 1/2 teaspoon salt and enough water to cover. Let stand 15 minutes at room temperature. Drain and pat dry.
  2. Preheat air fryer to 375°. In another bowl, mix oil, curry powder, onion salt, garlic powder and remaining 1/4 teaspoon salt; add chicken and toss to coat. In batches, place chicken in a single layer on tray in air-fryer basket. Cook until a thermometer inserted in chicken reads 170°-175°, 15-17 minutes, turning halfway through. If desired, sprinkle with cilantro.

@house_cat    You have company.  Summer is my favorite season but I love the fall flavors--apple cider donuts, pumpkin bread, pumpkin pie, pumpkin butter, pumpkin tea, cranberries, rutabaga, parsnip . . .

 

I am going through my annual inventory of spices and baking items in anticipation of the autumn and winter holidays.

 

So far it seems I only need to add to my stores of sugar and get a new supply of flour.

 

Closer to September I will start looking for Halloween candy to order to fill my treat bags to hand out to the neighborhood children and my own five grands.

 

                Bisquick Impossible Chicken Pot Pie

                               from their website

 

1 & 2/3 cups frozen mixed vegetables (peas, carrots,    green beans)

1 cup cut up cooked chicken

1 10.5 ounce Campbell's cream of chicken soup

1 cup Original Bisquick mix

1/2 cup of milk

1 egg

 

1.  Heat oven to 400 degrees Farenheit. Mix vegetables, chicken and soup in an ungreased 9 inch glass pie plate.

 

2.  Separately, mix remaining ingredients together with a fork until well blended.  Then pour into pie plate. 

 

3.  Bake 30 minutes until golden brown.

 

Notes: I add a couple of dashes of white pepper to the soup mixture, along with a pinch of celery seed, a 4 ounce can of sliced mushrooms, and a splash of sherry.

 

I often substitute cream of mushroom or celery instead of chicken if I don't have that on hand.

Glad to know I'm in good company.  We moved back east last year, so this is only my second autumn in many, many years and I'm so looking forward to it.

 

Thanks for the recipe. Over the decades I've made several Bisquick recipes that have become family favorites, but I haven't tried that one.... yet!

@aroc3435  I heard there will be a shortage of Halloween candy this year, so I'm going to buy mine early too, while the good choices are still available. The only problem is keeping them inside the bags instead of inside ME!

STRAWBERRY Salsa

 

1 pint fresh STRAWBERRIES, chopped

4 plum tomatoes, seeded and chopped

1 small red onion, finely chopped

1 to 2 medium jalapeño peppers, minced (optional)

2 tablespoons lime juice

1 tablespoon olive oil

2 garlic cloves, minced

Tortilla chips

 

In large bowl, combine STRAWBERRIES, tomatoes, onion and jalapeños.  Stir in lime juice, oil and garlic.  Cover and refrigerate for 2 hours.  Serve with tortilla chips.
