APRIL 2018 RECIPE GAME

Mini spaghetti and meatballs?  What a great idea and terrific portion contro . . . what?  Those are cupcakes?  April Fools my friends and let me tell you try typing in April Foods and see how badly you are attacked by the gods of auto-correct. Things are starting to get warmer so let's heat things up with some terrific recipes for the month of April!

 

.HOW TO PLAY.......
 
The first player of the month starts the game by posting their choice of recipe.  At the end of the text, she or he types, "the next ingredient: xxx."
(The x's represent that person's choice of any ingredient that can be included in a recipe).  

Throughout the game, the next poster in line must use the ingredient that the person ahead chose.  If you can, highlight the ingredient and/or put it in capital letters anywhere that it is used throughout the recipe.  That does make it easier for everyone to see how the game works.
 
Because of time or system delays, some duplicate posts occur to the same ingredient.  The next poster generally responds to the first post for the next ingredient.  Good recipes and lots of fun!!
 
Normally, we start out with a recipe so I will post the last one shared on the March thread and we can take it from there if that's ok with every body (thanks to our friend @walker!):.
 

BROCCOLI with Almonds

 

2 pkgs. frozen BROCCOLI

2 Tablespoons butter, melted

2 Tablespoons flour

2 cups milk

3/4 cup grated cheddar cheese

1 teaspoon salt

1/4 teaspoon pepper

1/4 cup slivered (or chopped) almonds

4 slices crisp bacon, broken into small pieces

1/2 cup buttered bread crumbs (mix with 1T butter)

 

Cook BROCCOLI until tender.  Drain and place in a 2 qt. greased casserole dish.  Make sauce of butter, flour, milk and cheese, salt and pepper.  Sprinkle BROCCOLI with almonds; pour on cheese sauce.  Sprinkle top with buttered bread crumbs and bacon bits.  Bake at 350 degrees for 30 minutes or until bubbly.

Brown Sugar Bacon Wraps

 

Ingredients
  • 1 pound sliced bacon
  • 1 (16 ounce) package miniature smoked sausage links
  • 1 cup packed brown sugar
 
Directions
  1. Cut each bacon strip in half widthwise. Wrap one piece of bacon around each sausage, secure with a toothpick.
  2. Place in a foil-lined 15-in. x 10-in. x 1-in. baking pan. Sprinkle with brown sugar. Bake, uncovered, at 400 degrees F for 30-40 minutes or until bacon is crisp and sausage is heated through.

 

NEXT INGREDIENT: Scallops

You never know how strong you are until being strong is the only choice you have.

I just saw this on a recent Pioneer Woman episode but have not tried it yet.  Reviews were good.

 

Seafood Pasta in a Foil Package

 

Sauce.....

 

1 lb. linguine

4 cloves garlic, minced

2 tablespoons butter

2 tablespoons olive oil

1/2 cup dry white wine

3 (14.5 oz) cans diced tomatoes

salt and fresh ground pepper

red pepper flakes

 

Seafood.......

 

1 tablespoon butter

1 tablespoon olive oil

1 lb. jumbo or large shrimp, peeled and deveined, rinsed and dried

1 lb. SCALLOPS, rinsed and dried

 

Preheat oven to 350 degrees.

 

For the sauce..... Cook the pasta for half the recommended cooking time, the pasta should still be firm.

 

In a skillet, cook garlic in the butter and olive oil for a few minutes, and then pour in the wine.  Allow this to reduce for a couple of minutes, and then pour in tomatoes.  Stir the mixture together, season with salt, pepper and red pepper flakes, and allow to cook for 10 minutes.

 

For the seafood....In separate skillet, heat butter and olive oil over medium heat.  Sear the SCALLOPS, then the shrimp, until they are nice and browned.

 

Meanwhile, grab 2 large sheets of heavy duty aluminum foil and overlap them in an oven-safe platter with a little depth.  It should be large enough to hold the entire pasta dish.

 

Mix the drained pasta with the sauce and tip it onto the foil.  Then arrange the sautéed seafood on top.  Tightly wrap the foil into a package.

 

Bake for 15-20 minutes.  Remove from oven and keep warm until serving.

 

To serve....Open the foil package right before serving.  Drizzle warm cream over top and sprinkle with torn basil and parsley.

Mushroom Rice Casserole
6 Servings
 
5 Tbsp. butter or margarine
1 (8 oz.) can mushroom stems and pieces, drained
1 cup chopped onion
1 cup long grain rice (uncooked)
1 (10 3/4 oz.) can cream of mushroom soup (undiluted)
1 (10 3/4 oz.) can beef consomme
 
Heat butter or margarine in a large skillet over high heat.  Saute the mushrooms and onion for 3 minutes.  Stir in the rice; saute for 3 more minutes, stirring constantly.  Remove skillet from heat.  Add the soup and consomme; mix well.  Pour the mixture into a greased casserole dish. Cover with foil.  Bake at 350° for 60 minutes.

Charleston Red Rice

  • 3 slices bacon
  • 2/3 cup sweet bell pepper, medium chop
  • 2/3 cup onion, medium chop
  • 2 cups vegetable stock or broth, preferably low sodium
  • 1 can tomato paste
  • ½ tsp. salt1 heaping cup brown rice
    (or 1 1/3 cups white extra long grain rice)
  • hot sauce, optional

In a saucepan fry the bacon until crisp and remove all but 1 Tbl. of the bacon fat. Set the bacon aside to drain for later use.
Saute the peppers and the onion in the bacon fat until just tender – about 3 minutes. Set aside.

Warm the broth and whisk or stir in the tomato paste.

In a heavy bottom pot (that has a lid) pour the broth/tomato mixture and heat to a boil. Mix in the rice, the vegetables, and the salt and stir.
Turn down the heat and cover with lid. Simmer on a low heat for about 40-45 minutes or until all liquid is absorbed. You can do this by tilting the pot to the side and see if any liquid is still in the bottom of the pot.

When you are reasonably assured all liquid has been absorbed, remove the lid and allow to sit for about 5 minutes off the heat. Then carefully fluff with a fork. The rice will be tender and slightly creamy. Serve immediately with crumbled bacon on top and hot sauce on the side, if desired. Serves 4-6.
