Good evening everyone. Our weather is really good and for the next whole week theres no rain at all. Temps will climb all week. 60s, 70s great week.today my mil made Escorole and beans, battered chicken Swiss chard pies. Sooner the RIcotta pies did have a bottom crust. Actually I got the crust recipe from ina  Garten from the bare foot centessa cooking show.if you want recipe for pie , crust or both let me know and I will post it.everyone have a very happy Easter.

I love the week after a holiday!  We had enough leftovers to pack to-go packages for my kids and still eat off it all week.  

Tonight we'll be having salmon, alongside leftover potato salad and brussel sprouts.

I was away at our family beach house on the Oregon coast w/ my husband. We spent about two weeks at the coast and my husband took care of all the evening meals. I made lunch, snacks and desserts ... but he either cooked dinner or we did take out. It was a lovely break from cooking. I didn't even cook the main meal for Easter.

My oldest son hosted our family Easter dinner. I brought augratin potatoes and butterscotch fluff. They served ham and not the pork roast we normally have for Easter. My dil said she didn't think she could cook a pork roast as well as I do (which is nonsense) so she went with ham. It was very good and my dh brought home a nice portion of ham for himself to have for lunch today.

We are having stuffed chicken breast, rice pilaf and corn for dinner tonight.

Good evening everyone. My mil cooked Easter dinner. She made a beef roast, fresh store bought ravioli with Alfredo sauce,  baked cauliflower, fried artichokes, roasted red peppers,  roasted potatoes, and more.today I made a big pan of Swedish meatball soup. Everything was very good. Everyone have a great week. We are getting summer weather this week.

Burgers on the grill, coleslaw, baked beans for dinner outdoors in the beautiful weather today!

I have been at my sister & brother-in- law's helping her after some minor back
surgery. The wonderful visiting nurse has been so helpful. And my bil is a great grocery/take out shopper so eating was very easy & tasty.

Everyone seems to have had delicious Easter feasts & reading about them made me very hungry! Have a nice evening!
