Breakfast was a chicken salad sandwich on white bread.

I don’t eat lunch but for dinner I made baked chicken drumsticks and thighs, seasoned oven roasted potatoes and spinach sautéed in garlic and a little EVOO.

Snack was an iced decaf coffee from Dunkin Donuts. I put a little vanilla Premier Protein shake in it.

Having meatloaf,baked potatoes,and corn. Will have the leftover potatoes to fry for breakfast.

Good evening every one.where expecting our first snow but not much. Ria made a big pan of chicken and rice soup so lots of leftovers and Yestauday she made scrambled eggs with leftover ham her mom made and I just made an apple cake. House smells great. How are you all going getting ready for Christmas?  Were getting our booster covid shot tonight. Hope everyone is doing well and eating well.

Good morning all! Nice & sunny here. Tonite will be burgers & brats on the grill. Baked beans & coleslaw along with buns, onions, etc. for toppings. Pineapple upside down cake for dessert. Might as well take advantage of this warmer weather! Who knows what will be on the way!

Chuck roast in the oven now. First browned on both sides with thick sliced onions then topped with low sodium onion soup mix. Poured about 1 1/2 cup of water in bottom of pan. In about 1 hour will add large chunks of carrots, sweet & russet potatoes sprinkled with paprika.

Sure smells good already. The added vegs really make this a delicious meal!

Tacos for us tonight.  

 

I am not cooking big meals in these weeks before Christmas in order to avoid a lot of leftovers that fill the fridge.   

 

I will start cooking for Christmas on the 23rd, and want the main fridge to be almost bare.

Friday, I made Chicken Florentine and roasted broccoli for dinner

Saturday, we ate out for lunch so we didn't want much for dinner.  I made fried eggs and roasted Brussels sprouts

Yesterday, we had baked ham, creamed mashed cauliflower, and roasted asparagus 

Tonight, we had leftover Chicken Florentine and a salad

Tomorrow I'm using the leftover ham to make ham, spinach, and cheese omelettes, with roasted Brussels sprouts, and keto waffles with butter and Keto friendly maple syrup.

Wednesday, beef stew and mashed creamed cauliflower, and green beans

Thursday, grilled boneless pork loin chops, roasted broccoli

Friday, eating out 

Saturday, grilled chicken with cheese & bacon, roasted asparagus 

Sunday, grilled chicken Caesar salad

Going out for fish fry at our favorite family-owned local restaurant. All you can eat but I give up pretty quickly! So fresh & homemade. Support local!!
