Good evening everyone. We had leftover mini meatballs soup and tonight I made grill cheese . were getting company this week. Ria made a Yule log and 6 kinds of Christmas cookies.  She usually makes Alot more but since she had brain surgery a couple months she made less. She not back to normal but she's doing Alot better. Hope everyone has a good weekend.

Baking chocolate chip oatmeal cookies & cranberry nut bread. No idea yet for dinner but we will have some tasty treats with hot cocoa later!!

I just finished making and peeling our week's supply of hard boiled eggs.  We ate more than usual Friday night (all legal foods, just a little more than usual).  I had already planned on a grilled chicken Caesar for today and we might end up having that again tomorrow.  We've also been kicking around the idea of doing dinner in the middle of the day and eating lighter in the evenings.  We'll try it for a week and see how we like it.

Well, so far, so good on us eating our dinner meal at noon.  I'm finding that it keeps me full longer and that even eating lighter in the evening I'm feeling stuffed. There are certain mentors in the keto world who say you need to eat your required macros everyday and there are others who say to keep the ratios right but only eat when you're hungry.  I've done the first way since I started but nowthat we have switched things up I'm going to pay closer attention to my body and see how that goes,  I may end up following OMAD and just having a small snack in the early evening rather than an actual meal, if we continue eating dinner at noon. We'll see.

 

I ended up with more grilled chicken than I had thought I calculated so we'll be having another Caesar salad today.  No complaints on that, we both enjoy it.  The usual hard boiled egg and chia seed pudding will fit in somewhere too,  The rest of the day is up for grabs, but I think we're going to do a couple of errands this afternoon.

I have a package of ground beef thawing in the fridge, to make zucchini boats for tomorrow and leftovers on Friday.  It's been awhile since we had them so I'm looking forward to them.

The zucchini boats were good - very filling.  Today I made breakfast at lunchtime:

 

Bacon 

Spinach & cheddar omelets

Keto waffles w/butter and keto maple syrup

Cold Brew Mocha Iced Latte

Keto Reese's Peanut Butter Pie


Very filling as well.  I won't want much of anything, other than maybe a small salad, later on.

Hubby had to go for a Covid test this morning prior to a procedure next week. We make a couple of other stops and now are on our way home.  I make the last two zucchini boats for us, along with some roasted broccoli or asparagus. We're going to see a movie this afternoon so we'll just pull a few random things together for dinner.
