@Pooky1  Hello pooky---I mostly read the posts.  I enjoy seeing into the kitchens of everyone here.  I have posted in the past but it's been a while.  Thanks for the welcome.

My Martha Stewart turkey dinner arrived today and the size of the spinach/

mashed potato sides is really disappointing. It is not for Thanksgiving so

it will be fine for me but would definitely NOT be dinner for four.

When I was out doing errands this morning, I stopped at the deli and got a breakfast sandwich. I also got a turkey sandwich and I am having that for dinner with Panera soup. 

 


 

@Danky  I am right now roasting cauliflower to snack on as you mentioned in another post, so thank you for the idea.  It never occurred to me to eat it during the day, lol.


@mousiegirl-----color me JEALOUS !

Ate 1/2 my sammy and didn't enjoy it that much...... Soooooo-I switched to cookies .

@RedTop----Good for you and speedy recovery. I've been told it is a painful and tedious procedure.

OMG--- yummy time at your house tonight and tomorrow. Beans and fried potatoes equals heaven to me.

danky i used to work in a restaurant and for a side dish they would dip cauliflower flowerettes is egg and bread crumbs and fry until golden brown. they were delishous. i would dip them in ketchup.

@Danky  LOL!  Our produce market gives away a food item every week if one spends $30.  DH went last Saturday after work, and asked me if he should get the free cauliflower, so I said yessssss, as I had it in mind to roast it.  I used my convection toaster oven and it came out perfectly, extra virgin olive oil, salt and pepper, love the tiny crusty almost burned bits. Smiley Happy

@RedTop  I know what you are going through somewhat as I had a hip replacement twenty years ago due to a childhood accident, if not for that, I would have never needed one.  I cooked a lot of food for the freezer before I went into the hospital because I knew with just DH here taking care of our  thirteen month old daughter that we would starve if I didn't, lol, worked out very well.  After three weeks, I was back to taking care of her by myself, but had to be careful not to do certain things.

 

What kind of beans are you soaking?  Lima beans?  How will you fix them?

I am soaking a mix of dried pinto and great northern beans.  I will drain them in the morning and start the cooking process, adding a piece of ham from the freezer to season them.   They will simmer away in the Dutch oven for at least 4-5 hours and make a delicious thick flavorful bowl of soup beans.   I add salt around the last hour of cooking.  My husband isn’t in favor of the fried potatoes, but is ready for beans, cornbread, onion, and spicy chow-chow relish.   

 

We prefer pinto, October, great northern, and yellow-eyed beans.  I like Lima beans, but he will not eat them.

@RedTop  Thank you. Smiley Happy   The beans sound delicious and the sides.  I make a vat of refried beans for the freezer, love pinto, butter beans, great northern, black, well, most.  I have made baked beans, and a lima bean stew.

 

I grew up on fried potatoes.  My Mother would cook new potatoes and then during the week, would peel, cut into small thin slices by going all around the potato, and fry until golden crispy, fabulous!

Good early morning to one and all. Welcome to all the newer posters - always good to see you here and hope you continue to come back with what's cooking at your home. So enjoy seeing what everyone does in the kitchen. The rest of you, as usual, are continuing to fix some fine foods. The children are still here but it was a strenuous day. Left home very early, traffic these days on our freeways have become unbearable and yesterday was no difference. Left the courthouse a little after two - yep we had to come back after lunch - and by the time I did my follow up travels and battling traffic AGAIN, I got home after 4 in the afternoon. That was so strenuous. They have rescheduled another hearing in late February - that does not mean they will leave anyone alone however. I think the Judge was smart enough to see through a lot of trivia writing and behavior. So I need to brace for a lot of unexpected visits and phone calls.

 

Was 10 here yesterday - another record high for that date. Today it will be "cooler" and only get into the "low" 90s. We shall see.

 

Am aiming to fix some black eyed peas -- with cornbread however. Easy to cook as I can put them on and they basically cook themselves for a while - cornbread will take a little time but no big deal. Probably will have some sliced tomatoes with it - that is that - good ole Southern cooking.
