Well Happy Friday to you also Preds - and everyone else. I am going to Good Friday Services with a friend at noon - then on to lunch with two others at a restaurant here which none of us have tried yet - it is always jammed so keep your fingers crossed we can get in to eat. Each year one church hosts community Good Friday services. It is always crowded - this year it is at the Seventh Day Adventist church. Not sure who will deliver the main message - rarely is it the pastor of the church who holds the service - always always super good!!!!! Music and message!!

 

So I suspect dinner will be light here at the house - but there will be food. By the way Soushi, how were those T-Bones? Haven't had one of those in years and years. Also hope Nelson is continuing to do better.

 

Will probably fix a ham for Easter - was not sure what I was going to do but that should work. We are trying to figure out what to do about an Easter Egg hunt for Ricky. He can be such an impulsive sweetheart at times we are just not sure. LOL. Of course there is always an Easter Egg hunt at home.

Morning all,

Has been rather frustrating around here. Nelson woke up in the middle of the night with oxygen unit not working properly. Since we brought it from Indiana, and we are now in Florida. It has been phone calls for about an hour now. Hopefully, a new unit will be provided by this afternoon.

 

He does have a small portable unit that he can use till a new one arrives. Thank God for that. Feel so bad for him.

 

Winifred, we haven't had the steaks yet. They will be dinner tonight. Watched a short video from a chief where you used butter and a hot skillet. He used butter and added butter to the skillet after cooking the steak. He scraped the bottom of the pan, with the butter, and poured that over the steak. Sounds good to me.

These look so good, yes, several steps but not that hard. Worth it.

 

Coconut Cream Pie Puffs

 

FOR THE CREAM FILLING


5 egg yolks
2 cups half & half
1 cup coconut milk
3/4 cup sugar
1/3 cup corn starch
1 cup sweetened coconut flakes
1 tsp vanilla extract

To a medium saucepan whisk together egg yolks, half and half, and coconut milk over medium/low heat. Once combined, add in sugar and corn starch, stirring constantly until the mixture thickens and comes to a light boil. Remove from heat and mix in the shredded coconut and vanilla extract. Cover with plastic wrap and chill at least two hours.

FOR THE PUFF

 

1/2 Cup Unsalted Butter /cubed
1/2 Cup Coconut Milk
1/2 Cup Water
Pinch of Salt
1 Cup Flour
4 Eggs (+1 for Egg wash)

Preheat oven to 425ËšF (220ËšC)

To a medium saucepan add the butter, coconut milk, water and salt over medium heat. Allow all the butter to melt and bring the mixture to a boil. As soon as the mixture begins to boil, reduce heat to medium/low and add in the flour. Using a wooden spoon, mix thoroughly to incorporate the flour. Continue stirring until the dough starts to pull away from the sides and a thin film forms on the bottom of the pan (about three minutes). Remove the mixture from heat and transfer to a large mixing bowl. Let the dough cool slightly. Add in the eggs, one at a time, being sure to fully incorporate each egg before adding the next.

Once the dough comes together, transfer it to a piping bag and pipe onto a parchment paper lined baking sheet into one and a half inch mounds.

Smooth out any peaks/ridges cause by piping with a wet fingertip (this will ensure your puffs cook evenly and maintain a nice ball shape). Then brush the dough with egg wash and place in preheated oven. Bake for 15 minutes at 425ËšF - then, without opening the oven - reduce heat to 350Ëš (175ËšC) and bake for an additional 15 minutes.

Remove Puffs from oven. Using the tip of a knife cut a small "x" into the bottom of each puff and transfer ("x" side up) to a cooling rack.

Just before serving (or up to two hours in advance) - pipe the cream filling into the cooled puffs. Sprinkle with powdered sugar. Enjoy!

Morning,

I have a head cold, had it for about a week now. Thought I would get better but it is slowly working its way into full blown sinus infection. This is always the way it turns out. I'm heading to a walk-in clinic in an hour. Nice that you can make an appointment on line.

Soushi, sinus infections are the most miserable thing one can have - in my opinion. I use to get them all the time and do not have them as often now. When I start getting a sore throat, sniffles, etc I RUN to Urgent Care and have them sometimes give me a shot while there but more often they prescribe the 5 pill antibiotics. If I take a longer antibiotic pill treatment, like a week or so, it does not help. The 5 pill is two the first day and then the remaining pills one day each it always has zapped it. I tell them I will only use the 5 pill as the longer treatment is worthless. Occasionally I still get a little stupid and think it will go away on its own but it never does.

 

Last night I glazed the ham and then cut it up so that is done. I ordered a precooked meal but the ham still takes a couple hours of reheating and glazing but at least it is done. The other things will heat after church. The meal also comes with sweet potatoes, scalloped potatoes and a green bean casserole. Apple pie and rolls also. Not a bad deal.

 

Davey is in Bakersfield with his Dad and am a bit irritated with him. Actually his Dad left him there at his request. Davey and his Dad were NOT getting along - well Davey tried his attitude with his Dad and it did not work well. So the people he is with are bringing him back Saturday - none of us are happy about it but Davey refused to ride back with his Dad. That boy is headed for trouble with that macho attitude of his. So he will not be here. Several other hitches in things here so it is a disappointing Easter - family wise that is.

 

Am headed to church this morning and am really looking forward to it.

Well, I am 4 penicillin pills a day. Started immediately yesterday but still clogged up, coughing, and miserable. But a little bit better.

 

Stopped for lunch at Walt's Fish Market. So good but couldn't eat it all. Will have leftovers later. Very little cooking here. JUST the basic things. Do have a nice thick slice of ham for today.
