I just got an OXO cookie press. I've never used one, and I wondered if you bakers have any tips. I have recipes, but they say use an ungreased cookie sheet, is this correct ? For some reason I just had to have this gadget, so any tips would be welcome. TIA š

It calls for not greasing the pan because that can cause the cookies to spread & go flat.
You can always use parchment paper if you think they might stick to your cookie sheets.
I remember my mom making those spritz butter cookies. They were melt in your mouth so good.

My Mother used to make spritz cookies. She experimented with different flavors and chocolate. The chocolate makes the dough more stiff, and the cookie is a bit harder.

With all the butter in the recipe, there isn't a need to grease the cookie sheet.
They're my favorite cookie to make because they're the only ones I do well. I'm not a good cookie maker.

I used to make lots of these cookies but haven't made them for more than a few years. I recall having trouble with the cookies not sticking to the cookie sheet, I'd lift the press and the cookie would come with the press. I think the dough may have gotten too warm and needed to be chilled.

Spritz cookies were one of the first cookies I was allowed to make on my own when I was a kid. I remember not greasing the pan.
If I were to make them now I'd probably use parchment paper.

About 10 years ago I made Spritz cookies from my old German recipe (that my mother and I used when in Germany) but didn't have a cookie press. I piped them out from a pastry bag. But since there are lots of ground nuts in the dough it was just very hard, but I managed. They have always been my favorite cookies and I miss them.
