Would it be just as good without a pie crust?

it is definitely possible and the results are fine.  The filling can be poured into a pie pan and baked in the oven. Check out the recipe on the Wholesome Yum website for Crustless Pumpkin Pie.  This is one of my go to sites for keto recipes.  With keto, a alternative sweetener would be used, but Maya gives the recipe using sugar as well. If that's not an issue for you.

That sounds like a good tip and I'll make a note of it on my recipe.  It's too late for this. year since the pie is already in my fridge.

If my pumpkin pie was already made, it would never see Thursday!

It is my FAV pie

The roasting is before you add the liquid (evap milk) and eggs.

But I think once it has cooled....add the other ingredients and bake again!

I think it would be delicious!!!

@RespectLife , that's interesting! The last pumpkin pie I attempted was probably 30-40 years ago. I had a dear couple over and so wanted everything to be perfect. I put the pie in the oven and, when I turned around to clean the counters, discovered the two eggs that should have been in the filling! Thankfully, that wasn't the only pie I made; I threw it all out and never tried again. No one in my family eats pumpkin pie so I never got the chance to make it again, the right way this time.

oh dear @Carolina925

I can see that happening!!!!
