I received a quesadilla maker for Christmas, ( yes I know you don't need a machine to make them, but it's the thought etc.). Anyway I made one for lunch with chicken ,peppers , salsa, and a little cheese, it was delicious. Do you all have any ideas for fillings ?  I use corn tortillas.

I like queso (Mexican) shredded cheese, shredded chicken and mushrooms!

I love quesadillas and make them on a regular basis. My favorite fillings are pepper jack cheese, a little sharp cheddar, poblano peppers and pickled red onions. Because I love spice, I sometimes add sliced jalapenos ( pickled or fresh thinly sliced ), or a sprinkle of crushed red pepper depending on the cheese I use. Smoked mozzarella or gouda, are also delish when you want to switch things up. I don't eat meat, but you can add your meat of choice. My son likes his with thinly sliced steak.

I have a quesadilla maker that I use at least once a week. If you want to go meatless, try black beans, salsa and cheese (pepper jack or a shredded mexican blend). Also breakfast with scrambled egg,cheese and salsa.

 

I also like a tuna melt quesadiila and ham and cheese quesadilla.

Polenta, refried beans, a little salsa and sour cream to serve.  YUM!

I've made this filing with leftover turkey, but chicken works too:

 

2 cups shredded cooked turkey of chicken meat

1/2 cup barbecue sauce

a couple thinly-sliced scallions

3 1/2 oz can drained green chiles 

2 cups shredded cheese (I like a cheddar/Monterey Jack mix)

 

Stir together meat, barbecue sauce, and chiles and spread on tortillas.  Sprinkle on scallions, then cheese.

I usually make pizza quesadelias:  a little sauce, cheese, peppers, pepperoni and often use pita bread.

Oh how I love quesadillas, and thanks a lot @QVCkitty1  for the craving

I now have Woman LOL

I put a layer of refried beans on my flour tortillas, then top with all the

good stuff.  I like fajita chicken, grilled onions, peppers, diced japaleno, cheese,

sometimes I add in some leftover mexican rice, if I don't have it on the side.

 

For dipping, I either use just sour cream, or queso, or  avocado jalepeno

dressing.

 

I wish I had a platter of these in front of me.
