good stuff.  I like fajita chicken, grilled onions, peppers, diced japaleno, cheese,

sometimes I add in some leftover mexican rice, if I don't have it on the side.

 

For dipping, I either use just sour cream, or queso, or  avocado jalepeno

dressing.

 

I wish I had a platter of these in front of me.

I had one for lunch about an hour ago.   I'd cooked a chicken in the foodi on Saturday.  So I had chicken, shredded cheese, salsa, jalapenos on a flour tortilla.   I forgot the sour cream.   Smiley Sad     It was very good , quick and easy.

 

I also make breakfast quesadillas/burritos with scrambled eggs, cheese, crumbled sausage.  Tasty too.

I use a cool ranch chicken recipe to make 1-2 pounds of shredded chicken every month and use it for quesadillas, tacos, nachos, and tostadas. It's easy to cook some up, shred it, then freeze it in separate portions to be used for different dinner options.

 

Some things I love in a quesadilla:

  • cool ranch chicken
  • shrimp
  • mixed Mexican shredded cheese
  • grilled onions and green bell peppers (fajita style)
  • refried beans (pinto or black beans)
  • canned  black beans

I keep some sour cream and guacamole for dipping.

I love quesadillas but they have to be made with flour tortillas. 

 

I don't like cornmeal anything.

I still have some turkey and ham left over in my freezer for Christmas.  Last night I did one with turkey, gravy (instead of cheese) and a bit of stove top stuffing.  Still had a bit of blackeyed peas from New Years Day in the fridge so I threw the last of that in there too.  Peas but none of the juice.  Tasted like the holidays.  YUM
