We eat lots of eggs, at least one a day for each of us.  I prefer pasture raised eggs.  I was buying them from a local organic farm for $4.00/doz., which is already seems high for eggs, but I accepted it because it was what I wanted.  Last fall they raised their price to $5.00/doz.  I ordered some and when I picked them up they were already a month past the laying date. That bothered me. I've bought Vital Farms a few times but Aldi now has pasture raised so I'll get them they're. 

@Icegoddess  I make my hard boiled eggs in an instant pot, it's the only thing I use it for too.  Before the IP, I was always frustrated by shells that didn't come off easily and mangled eggs were the result.  I tried numerous methods and finally gave in and bought the IP on a Black Friday sale. Best $50 buck investment.

Egg shells - a rumor -  a myth -or  something else

 

The fresher the egg = the harder (more difficult)..... to peel

We don't have trouble shelling the eggs that are steamed not boiled.  We have a small stainless pot that has a steamer insert that comes with it and a glass lid and it is great for steaming eggs. 

 

It is a MeMecook Stainless Sauce pan with strainer lid and steamer insert.  We found it on Amazon, and turns out we use it all the time for a lot of things.

There is an Eggland's  Best farm near me and I met a supervisor who said the hens ate better than he did!

 

They are fed a balanced diet...makes good eggs!

I steam my eggs in a basket inside a pot, take them out and immediately place them inside an airtight container (like a Tupperware thing) and put them in the fridge. While they cool, the shells will separate themselves away from the whites so that makes it easy to peel. I let them cool for several hours before attempting to peel them to ensure the shells come off easily.

@SilleeMee Your method is different from mine - I dump the hot water immediately - run cold water over eggs - add ice cubes in sauce pan and fill with water.  Let stand to chill .

..........then peel shells

...........refrigerate eggs in bowl immediately

 

Always believed important to cool eggs ASAP

(your way - my way  -just  different techniques)

I use to do it your way all the time until I saw 'my way' on an episode of ATK where they said the key is to put the eggs inside an airtight container to make it work....and it does better than any other way I've tried so far.

We prefer locally raised eggs but sometimes get at the grocery.  Always look for free range or pasture raised organic eggs for us.  

If my dog doesn't like you, neither do I.
