Gosh, I'm so easy. I can't think of one single vegetable I don't like. Heck, I can hardly think of a food I don't like...maybe licorice, and that's about it on the do not eat list for me. Ha!

Have to say that I like all fresh vegetables. Never canned ..some frozen like peas and corn. I always try to have some kind of vegetable on my plate at each meal.

Maybe fennel? I have a love-hate thing with anise-flavored things. Sometimes, I love them but usually I don't like the sweet aftertaste.

 

I used to have Brussels sprouts on my "hate" list but my sister made a shredded sprouts with wine for a Thanksgiving meal (last one we ever had with our parents) and they were outstanding. And then I discovered roasting them. Yummy. I eat them like candy now.

 

And after roasting, I found that if you saute them with ONE strip of cubed bacon and some mushrooms (and shallots if you have them, but not necessary) they are incredible. I went from hate-to-love pretty fast.

 

I also hated broccoli slaw, but adding pomegranate or any fruit balsamic vinegar to that recipe worked its magic. A friend made me three fruit vingars for my birthday and I'm thinking, pears plus sprouts and pear balsamic glaze.

 

Still not into fennel, however.
