Add me to the beet list although I've never eaten them. I couldn't get past the smell. My mother still talks about it to this day (40 years later) that she had to take the cooked beets off the table because I threatened to gag and worse at the smell of them when I was a kid. I don't think she ever made them again. If she did, they were well hidden from me and my nose.

I love, like or can tolerate any and every vegetable except for beets. It's ironic, because I've never had them.

I actually bought brussel sprouts at the store this week as part of my New Years resolution to eat better with more vegetables. I've never had them. They might go on the list too once I figure out how to make them based on what I've heard but I won't besmirch their name until I try a bite.

Laura, good for you for trying them!
I like brussel spouts roasted with carrots. Roasting brings out the sweet in any vegetable. Look at Bon Appetit for recipes.

I half brussel sprouts and saute in garlic butter until almost done and then top with Parmesan and brown that in the toaster oven.

I just can't eat Asparagus. No matter how they are cooked, I don't like them. Lol

There are so many vegetables I have never cooked with or probably tasted. I don't think I ever had celery root or turnips. Unless it is served in a restaurant and I didn't know it. I like taro which most people never tasted.
I like most vegetables but....there are exceptions. I drink a kale shake every morning. YUCK - it contains 1 cup of almond milk, 4 cups of kale, 3/4 cup blueberries and 1 banana. I just gulp it down for I believe it is good for me but I'm not lingering and sipping it slowly.
I'm with you on the celery. I do the same thing...chop it so small I can't see it, or make the pieces big enough I can pick them out. Glad I have another person who does what I do! I will use celery seed though.

I'll take the lima beans! It is one of my favorites, especially with some grated cheese.
