My son is a line cook at an upscale taco restaurant.   They make their tortillas from scratch every day for their soft tacos.  Spicy baja shrimp is my fav.    Amazing flavors, fresh, fresh, fresh.   I can eat my weight in fresh pico de gallo.

The roasted Mexican street corn is to die for

I love a good chunky guacamole.

Not to mention margaritas, on the rocks

I like tangy, spicy but not HOT.   I like to taste my food.

@software, we have the same taste buds, right down to the margarita on the rocks.

LOVE IT!

My favorite has got to be chicken chile relleno peppers! Yum!  With a side of a gold or silver margarita on the rocks with salt!! 😉

Mexican, Tex-Mex, Southwestern - love it all!

Living in Texas, there's a Mexican restaurant on every block, just about. And that's fine with me.

I can make good enchiladas - cheese or shrimp or spinach or chicken. But usually I cook heathier food at home, and eat out for Mexican food.

Eh.  If there was no more Mexican food available ever again, it wouldn't bother me in the least.

Yes we have a few authentic Mexican restaurants around us.  We rarely if ever eat there.

I love me some Mexican.

I usually eat 6 shrimp, chicken, beef or pork tacos for lunch or dinner.  Soft or hard taco shells.  Doesn't matter.    Eat Mexican at least 3 x week..

Or I may change up and have 4 enchiladas in mole, red or green sauce.

Or 6 tamales for dinner is good too.

Or combo if I'm really,hungry.

Black beans or refried pinto beans, and Mexican rice on the side.  Sour cream and heavy on the cheese.  Plenty of tortilla chips, guacamole, salsa, and chili peppers.

All cooked in lard to taste good.

Wash it all down with a couple of Mexican beers and a lot of tequila.    Smiley Happy
