Interesting. I saw a few fajita but mostly taco. I can't find enchilada seasoning - looking since last winter. Tried one recipe on line but it was so heavy and not enough liquid.  Can't imagine why.

If you are looking for red enchilada sauce, I make this recipe:

 

1 onion, chopped

1/2 tsp salt

1 tsp oil

2 tbsp chili powder

1 tbsp minced garlic

1 tbsp sugar

2 tsp cumin

16 oz tomato sauce

1 cup water

 

Cook onion, salt, and oil in covered saucepan over low heat until onions have softened, stir often.  Stir in chili powder, garlic, sugar, and cumin to mix.  Stir in tomato sauce and water and bring to simmer until slightly thickened.  Pour and press through fine-mesh strainer into bowl to remove onions and garlic.
