It's been a month since my husband was told he has Type 2 Diabetes and the instructions on his Metformin say to take it after breakfast and after dinner.

 

He was never one for breakfast but you would think after a month I wouldn't have to ask him 3 times a morning what he wants to eat.  It's not like I'm asking him the minute his feet hit the floor.

@catter70 are you from NJ?  Go two or three states away from NJ and no one knows what pork roll is unless they're a transplant!

    DH & I treated ourselves to a bagels & lox platter at the diner this morning.I had it with an iced decaf coffee. Yummy.

    Usually we have fresh fruit & toast or sugar free pound cake. Decaf coffee or tea.

@CelticCrafter , yes, I grew up in NJ, but have lived in Pa. for 50years. Love porkroll.

@JeanLouiseFinch me too!  except I just started a couple weeks ago and am slowly getting used to it.  I've been stopping at 6pm and starting up at 10:30am.  And I'm really trying to focus on eating better during the day.  What do you usually have as your first meal at noon?


@Knit-Chick Fantastic!  IF is really good for you and the longer you can extend it, the better.  At 18 hrs., your body goes into autophagy and that's when benefits really start to kick in.   

Since I am in the keto lifestyle, I track my food both macros and calories.  I plan everything I eat in advance.  The first thing I do is plug in dinner into my tracking app.  After that, I can play around with what remains.  I always have some "musts" besides my actual meal; a hard boiled egg, a small amount of bone broth with non-fortified nutritional yeast added, certain supplements.  As for my actual first meal at lunchtime, it will be either Two Good Yogurt or Ratio Keto Yogurt with some berries and some healthy keto granola mixed in, or I may skip the HBE and make my self fried eggs with a keto veg and either some bacon or half of an avocado. Sometimes I'll have two HBE and some celery with cream cheese and everything bagel seasoning.  Several times a week lol enjoy a colorful salad (romaine, spinach, cucumbers, mini peppers, tomato, Kalamata olives, avocado, Walden Farms calorie free dressing or Ken's Bleu Cheese, depending on my macros).  Sometimes I will make a simple Caesar salad (romaine, Ken's Caesar, and fresh Parmesan cheese). Like I said, what I have for my first meal is decided based on what dinner will be.  I'm never out of options.  

BTW, there is a monthly "what's cooking'" thread in this forum. I am pretty active on it and will share my lunches and dinners, just in case you're interested.

I had a Jimmy Dean Breakfast Sandwich (egg, cheese & sausage on an English Muffin).  I toasted the english muffin and nuked the egg, sausage and cheese.

Knowledge is knowing that a tomato is a fruit, but Wisdom is knowing not to put it in a fruit salad.

Your breakfast sounds exactly like mine except for the coffee.  I'm a tea drinker.

 

Before the pandemic my husband and I would on occasion go to McDonald's for breakfast.  We still go but now we eat in our car.   I love their hashbrowns.  

 

I've always been a breakfast eater.  I don't think I would be able to make it through the morning without eating something.
