Storing potatoes in the fridge will cause the starch to 

turn to sugar, leaving you with a sweet gritty potato.  Plus don’t store next to onions,

both release gasses that cause the other to spoil faster..just buy small quantities that can be used in a week and store in an open weave basket in a cool place..
