For lunch daily in an egg white omelet. Then again at dinner raw dipped in salsa.
Love veggies and have usually four different kinds a day including mini carrot sticks.

I drink probably 4 or 5 different greens every morning in my smoothie and then other types of vegs with dinner.

I would love your recipe and timing. That sounds like a great way to bake on Sunday and eat them throughout the week. A nice, quick lunch!

Every single day we eat a healthy salad with dinner and I always, always make a cooked vegetable with dinner also.

I wasn't being very good about the five servings a day (and it's only what, a half cut a serving so not hard to get with a salad or two)--
So I started eating raw veggies at lunch. I make a small pill cup of dressing from the work fridge and open a pack of snap peas, carrots, celery, green peppers, any veg. I dip them and crunch away. I get some turkey and no bread and it's quite a filling lunch.
I also juice my veggies and drink the juice instead of orange juice at breakfast. You're supposed to make it fresh every day, but I store a mason jar for two days.

Does eating the green bean casserole on Thanksgiving count?
OK, I do eat green peppers, romaine lettuce and cabbage. Not a big green veggie fan here, obviously!

There is always a salad with dinner and usually some protein. Tonight it is roasted asparagus with an egg on top. Sauteed spinach is my favorite vegetable and I often use it instead of rice with a stir fry.

Every single day; I snack on sugar snap peas. I also take a special Morter supplement called Alka-Green.
