You do not have to preheat it. RangeMate advises not to preheat it but some people said they were not getting grill marks so RangeMate said it's ok to preheat it but ONLY for 5 minutes, no longer, and that will get it hot enough. I haven't had to preheat mine for anything and I get brown grill marks just from using a tiny bit of olive oil or butter.
