My mom used to make green tomatoe mincemeat for pies--it was so good and really, there was no meat in it, but lots of spices and prob some raisins too. I think I made it once ---lots of work and no one likes rasins in my world.

Tomatoes will usually ripen on their own, on or off the vine. Once the vines die, we pull the tomatoes and set them on newspaper in the garage to ripen.
