Hate cooking for one. The only thing worse is food shopping for one.

I often rely on the frozen boxes. Sometimes something will catch my eye in the market. I find things in the pantry or 'fridge and have no idea what I had in mind when I bought it.

The upside: dinner is when I get hungry.

I'm making a large pot of beef stew in the pressure cooker today. It' really cold with snow here so it will hit the spot. We can eat some tomorrow & I can freeze the rest. Enjoy your rice cooker. If you did not get the cookbook that goes with it I recommend it. It has lots of easy recipes. So far all I have cooked in it turned out good.

I love the new Barilla high fiber pasta. 3X the fiber of regular pasta and it isn't that brown stuff I dislike. I make it with tomato sauce, toss in some vegetables like zucchini or mushrooms. A salad and a bit of goat cheese and I have a meal.

I also like omelets with lots of veg, adding an egg white or two to one egg to make it fluffy but less fatty.

Another quick meal is a chicken curry with tomato, potatoes and onions and a few raisins for contrast.
