I poached chicken breasts like Martha Stewart and put the chicken, in the broth, in the pot and used it a week later. It was delicious.
Often, how the product is handled determines how long it will be safe to eat. Reheat it in chicken broth and boil it 3 mins. Rachel Ray cooks on Sunday and eats off it all week!

I would never eat that. It's not worth getting sick over. I follow the 2-day rule and it has always worked. If I cook it on a Monday night, if it's not consumed by Wednesday evening at the latest, it's gone. Most of the time, I can tell if I need to freeze some the same night of cooking or the next night. Otherwise, if it's not eaten or frozen by that 2nd day after being cooked, it's thrown out.

If the chicken is already a week old, how long would the salad be good?

Cooked chicken can be in my fridge three days then out it goes. No exceptions. I'm simply not chancing food poisoning, and if I fail to freeze it before the three days, my bad.
For another thing, you don't know how long that chicken had been hanging around when you bought it, or how well it had been held at the proper temp. Ewwwwwww!

According to the FDA, the time limit for cooked poultry is 3 or 4 days if it's refrigerated at 40 degrees or colder. Here is their useful, easy to read chart:

My refrigerator is very, very cold. I do 4 days, max. but I plan better than that.
I keep a calendar and know what is being cooked. We may cook for two nights, but no moer unless it's a small pot roast. There's times when one will have the end of one thing and the other will start something else.
An example would be bean soup. No thank you! He'll grill several days of chicken for me. I dislike all dried beans with a pashion! In any form!

I keep my fridge just below freezing (and if I put something too close to the back wall, it will freeze LOL)
I like my food, especially my dairy, ice cold and I like it to last past the expiration date.
It's a personal choice and how it's stored as to whether it's still good enough to eat.
My position is, if you have to ask, it's probably not good. And I always err on the side of caution and toss it out. To me, the loss of expensive organic chicken breasts is a small price to pay not to get sick for 3 days ;o)

I cook chicken casseroles often with the chicken, carrots, potatoes, celery etc and some broth. If I cook enough of it it will last me a good week. I have never had a problem with it. I do have a habit though of heating it back up on the stove on low heat for at least a half hour before eating the left overs. The broth is usually bubbling by then so it is all heated through again. Always tastes great even on day 6 or 7.

Cooked meat I don't mess around with. In the trash or freeze.
