Imitation vanilla is best for baking, because it doesn't break down with heat. I prefer Goodman's. If vanilla is added after heat such as in custards, pie fillings, and ice cream, real vanilla is best. This article clears up a lot of misconceptions.

It used to say Madagascar on the bottle but it no longer does.

Right now I have 2 bottles of "homemade" vanilla perking in a dark cabinet. In the meantime, I do have pure vanilla, but the bottle is almost empty and when that's gone, I will try Baker's Imitation Vanilla Flavor. Bought it at Wal Mart for a little under or over $1.00 for an 8 oz. bottle. Quite the bargain given the recommendation. Bought it because it was very highly recommended on either America's Test Kitchen or Cook's Country. I haven't had to use it yet, but won't hesitate.

I have four bottles of homemade vanilla extract in my "dark:" cabinet that have been brewing for quite a while. I just agitate the contents every once in a while. I gave a friend of mine a large bottle (I used an empty wine bottle) as a Christmas gift one year. She is still using it. I love the way you can keep adding to the bottle as you use it to make more extract. Vanilla beans are so expensive now. I usually make mine with vodka but I did make one bottle with bourbon just to try it. Maple syrup bottles are also great to use especially if you are planning on giving as a gift.
