I use a pastry scraper (dough scraper) to slice lasagna, pizza, nachos etc.

I was inspired by the thread on mashed potatoes to finally get a potato ricer. I got the Wolfgang Puck model on HSN. It's just $12.50, free shipping right now. It arrived yesterday and it's a sturdy-looking item. I'm going to do mashed potatoes in it first, but then I'll try eggs for egg salad and report back on how well it works.

 

I guess if you don't like your yolks and whites very finely macerated, this method won't work for you. I like them that way, so I'll see if it's the way I want to do them from now on. I'll still get out the Kuhn Rikon Chop-Chop to do the celery and scallions, but at least I'll test the ricer on the eggs.

At some point in the last few years, I saw a cooking show where common items already in the kitchen were used for different purposes, instead of buying new gadgets.   This is where I saw boiled eggs pushed thru a wire cooling rack.   It looked too messy for me, compared to mashing with a fork.
