We love Costco Rotisserie Chicken. The first thing I do, however, is remove the skin, as I need to not eat the "modified" ingredient in the rub (migraine).
Honestly, it tastes great and I can really stretch this puppy. This was a Costco Rotisserie week of sorts. Made chicken caesar salad the first evening; mixed bean and chicken tacos the next evening; and, today I'm making chicken/barley/brown rice/veggie soup for supper. The soup will cover 2 meals and the remained will be frozen for other meals down the road.
