My soon-to-be 96 year old mother LOVES Costco bbq chicken. Mom has a friend who knows that when she goes to Costco, she must bring a chicken home for my mother. It can last her almost a week. Sometimes she freezes some of it to have later but when that friend brings those chickens, it makes my mother’s day.

I LOVE the rotisserie chicken at Sam's Club...   that's one of the few reasons why I keep my membership.  I heard that Sam's and Costco add sugar to the brine that they use,  which partically makes it addictive.  Whatever it is,  it is DELICIOUS, and probably a much healthier choice than plenty of other things people eat on a regular basis. The value is amazing and the quality always consistent.  We're actually having one tonight!!!!!

I don't think Costco's rotisserie chicken has a lot of flavor.  I prefer the ones made at my local grocery store.

 

I do buy the Costco chicken when I'm going to morph it into something else that I can season for whatever particular dish I'm making.

I've never tried Costco rotisserie chicken, but I'd like to pick one up one of these days as I've heard so much about them.

 

Aldi marks down their organic whole chickens a couple days before the expiration date, so I like to pick one up and make it the same night on my rotisserie. As a kitchen gadget junkie, I have both a Ronco rotisserie from when QVC sold them, and a vertical rotisserie.  When I use the vertical rotisserie, I make a recipe from the manual where you season the inside and outside of the chicken with a rub, then add a can of beer to the cooking well where the chicken sits.  It's delicious.

@Topaz Gem, I have a really old vertical rotisserie and love the way it cooks. I have never done it with the beer in the well. I don't have the manual with recipes, so is there anything else to the recipe or do you just season inside and out with anything and add beer or is there more to it?

There are SO MANY good things you can do with a Costco chicken, in fact, they carried a cookbook at one time with recipes for chicken salad, soup, sandwiches, and too many other uses for me to remember.

 

I usually get two at a time, have one sliced for dinner and use the rest various other ways.

Costco's rotisserie chicken is a wonderful product, but lately I've grown to prefer the smaller, scrawnier ones sold in our local grocery stores, such as Publix and Kroger.

 

The Costco version is so big and meaty that it's too much for two people to use up quickly.  I like buying the smaller ones (even though they cost a dollar more).  

 

DH eats the legs, I tear off the white meat and use it in some sort of a recipe, and by that time, there's nothing left and the carcass can go in the trash that night.

 

I know some people would prefer to make broth out of the carcass, but not me---I want one day's use, not having to package up and store any  leftovers and then  be able to throw the remaining scraps away.  One and done!!

 

Obviously, I'm more into convenience these days than saving money.

Hi Debcakes, here is the recipe from my manual:

 

Beer Can Style Chicken

 

1 whole chicken  (4 lbs.)

175 ml of your favorite beer

 

Dry Rub

 

1 tsp. smoked paprika 

1 tsp. onion powder

1 tsp. garlic powder

1/2 tsp. salt

1/2 tsp. pepper

1/2 tsp. dried thyme

 

Remove neck and giblets from chicken.  Rinse chicken inside and out under cold water and pat dry with paper towel.  Rub dry rub ingredients on chicken skin and inside cavity.  Place chicken on poultry rack.  Place poultry rack on drip tray and place into rotisserie.

 

Pour 175 ml of beer in drip tray.  Cook chicken at 425 degrees for 1 1/2 hours or until an instant read thermometer registers 180°F.  (Insert thermometer in inner thigh near the breast but not touching the bone.

 

Note:  If you're unable to set the temperature on your vertical rotisserie, just follow your machine's directions for cooking a 4 lb chicken.  Cooking times may vary.  Next time I make this, I may put some of the rub under the skin, directly on the chicken breasts for more flavor.  Also, I used Budweiser, but would like to experiment with different types of beers to see how it turns out.  I am happy with this dry rub recipe, but if you have a favorite, you can always substitute.

They make chicken inverters for taste infusion.I've had one for yrs. Think Meredith sells one here I got mine from a camping store outlet think it was

Don't use it much.

 

Chicken sits down on the center knob vertically. Inside the center funnel you pour whatever flavor you want to infuse the chicken with. I've heard of beer, bbq sauce, lemon water, pepsi, etc.

@Topaz Gem   I have that one too!    They sold 2 different vertical rotisseries.  I finally gave one away.  THey worked really well.
