I want to learn how to make soy free bread and use a bread making machine. Please share your best machines (currently available and not old models) and recipes please. I am tired of reading labels and finding soy and preservatives. Thanks for help.Kiss

I recommend the Zojirushi brand. I have the small and the large, and they are excellent machines.

I read threads that might have interesting info. I didn't reply substantively because I don't have an answer. I'm sure that applies to other people.

King Arthur Flour is a great source for all things bread. You may want to check out their blogs, recipes, and forums.

As far as machines go, the general consensus (if there is such a thing) is that the Zojirushi is probably the best machine on the market. If you check out the KAF website, look up the machine in their online catalog; not only has the company written a lot about it, but you can read a lot of helpful, unbiased reviews.

The Zojirushi is a great machine-and I echo the poster who cited King Arthur as the source for information concerning all baked goods. I would also like to bring something else up for your consideration: consider purchasing a grain mill. You can make flour from just about anything you can think of-including beans. You will know whatever flour you make-will be the freshest and preservative free. I'm using a Vitamix to mill my own flours (I have a dry container which is what you really need) and the Vitamix is an incredibly versatile machine, but you can purchase a manual grain mill from Lehman's for a fraction of what the Vitamix costs. Having the ability to mill my own flours has added an entirely new dimension to my cooking. For example, if I want to make a cream soup, instead of adding cream, flour or sky high sodium canned soup, I add a couple of tablespoons of white bean flour (made from either dried cannelini beans or navy beans-whatever I have on hand)....and don't get me started on the wonders and joys of fresh milled whole wheat flour....it's incredible and you will quickly put aside any thoughts of ever buying store bought again!

Here is a recipe with very few ingredients & is really good.

Milk & Honey Bread

1 cup plus 1 tablespoon milk

3 tablespoons honey

3 tablespoons melted butter

3 cups bread flour

1 1/2 teaspoons salt

2 teaspoons active dry yeast

Wonder Bread Copycat
This is a delicious, buttery white bread that is
great for sandwiches, toast or just plain with butter.


This has the lightness and texture of Wonder Bread but with a nice buttery flavor.

2/3 cup lukewarm water
1 large egg
1 tablespoon granulated sugar
1 1/4 teaspoons table salt
5 tablespoons soft butter (I used butter flavor Crisco)
1/2 cup plain yogurt
3 1/4 to 3 1/2 cups Unbleached All-Purpose Flour
2 1/2 teaspoons (or 1 packet) bread machine or instant yeast

Add ingredients to bread machine in order listed or
according to your bread machine mfg's directions.

Settings: White Bread, 1 1/2 lb loaf, Medium Crust.

Press Start.

Makes One, 1 1/2 lb loaf.

Outback Steakhouse Honey Wheat Bushman Bread for Bread Machine
1 1/4 cups warm black coffee (90-F - 100-F)
1/4 cup honey
2 Tbsp brown sugar or dark brown sugar
2 Tbsp butter, softened or melted
1 Tbsp unsweetened cocoa powder
1 tsp table salt
2 cups Bread Flour
1 1/2 to 1 3/4 cups Whole Wheat Flour
2 1/4 tsp Bread Machine or Instant Yeast

Regular White Bread Cycle; 2 lb loaf; Medium crust.

Add ingredients to bread machine in order listed.

Set Bread machine to Regular White Bread Cycle; 2 lb loaf; Medium crust.

Press start.

Check the dough after about 5-minutes of kneading and add water or flour as
needed, a tablespoon at a time, to form a smooth, non-sticky ball of dough.
It should hold its own shape but not be so dry that it is crumbly.

When done, remove from pan and allow to cool before slicing.

Makes one 2-pound loaf of Outback Steakhouse Honey Wheat Bushman Bread

Honey Butter

1/2 cup butter, softened
1/3 cup honey

Beat butter and honey together until creamy.
Serve at room temperature.

Zojirushi!! I have the mini and I love it. You might check ebay, sometimes you can get a really good deal on a new one.Smile

Here's my favorite bread machine recipe--it just makes the dough and you'll have to form the breadsticks yourself. My family loves these!

Oh and my Oster bread machine is about 15 years old and have never had a problem with it.

Soft Italian Breadsticks (Bread Machine)

1 cup warm water

3 Tbsp butter or margarine, softened

1 ½ tsp salt

3 cups bread flour

2 Tbsp sugar

1 tsp Italian seasoning

1 tsp garlic powder

2 ÂĽ tps yeast

Topping: 1 Tbsp butter melted, 1 Tbsp grated Parmesan cheese

In bread machine pan, place the first 8 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 -2 Tbsp of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface; divide in half. Cut each portion into 12 pieces; roll each into a 4 inch to 6 inch rope. Place 2 inches apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 20 minutes. Bake at 350 for 15 to 18 minutes or until golden brown. Immediately brush with butter; sprinkle with Parmesan cheese. Serve warm. Makes 2 dozen.

Vitamix to make your own flour and handle the kneading to dough-ball stage. Then a simple loaf pan. The wet container can make dough balls and the dry can be used to grind rice, wheat, or similar to flour so you control all ingredients.
