Beef and noodles? If you don't have any gravy, use jarred beef gravy. That stuff is pretty good.
Hash? Fry some potatoes and when the potatoes are 99% done, add the roast beef that is cut into bite sized chunks. If you have some carrots from the roast, add them at the same time you do the roast.

Grind it up and make some hash. Good recipes abound via Google. Enjoy.

I make soup. 2 parts chopped onion, 1 part carrots and celery. "Sweat" these veggies for about 10 minutes in a little oil, add cubed beef, one part beef stock, one part tomato or V8 juice, a bay leaf, salt and pepper to taste and simmer for about an hour. I also add a can of green or wax beans. You can add cooked, cubed potatoes, but I like to add orzo that's been cooked (don't add the orzo to the soup to be boiled as it will thicken it too much-I put the orzo in the soup bowl then add the soup).

Slice the roast beef very thin and place the slices in some hot gravy.
Toast a few slices of bread and place the roast beef with some of the gravy over the toasted slices.
Add some hot garlic mashed potatoes, and string beans to the plate, and you will have made a Hot Open Face Roast Beef entree which costs over $22.00 per order in many restaurants.
This is truly a delicious way to use the leftover roast beef, or you can just make open roast beef sandwiches with no sides.

Chimichangas are always my favorite thing to do with extra roast. Shred it and add some cheese and salsa and roll in a flour tortilla and fry. These also freeze well.

Got flour tortillas? then try Burritos, quesadillas, soft tacos... Enchiladas, but I like corn tortillas for those- slice it into strips and use it in stir fry, lo mein, beef fried rice, ramen - chop it up add some tomato sauce, green olives, onion and raisins and make empanadas..
Along the lines of what Adore said, make a Kentucky hot brown substituting the beef for turkey...

You could make beef barbeque out of it. Just shred, add your own special homemade bbq sauce or your favorite from the store. Put it on a big bun with some cole slaw and there you go. Maybe come chips, fries or onion rings on the side.
