Stir fry flank steak and scallops, celery, onions, snow peas, fresh mushrooms, broccoli, and cabbage in a white wine sauce over 1/2 C fried rice.  Yes, I measure!!!Smiley Happy

Wow!!!  You ladies go all out for dinner.  I almost don't want to admit to having sort of homemade chicken soup using leftover Costco rotisserie chicken.  It was good!!!

Buttermilk fried chicken breasts and corn on the cob.

 

I'd bought a bag of Kirkland frozen breasts that are tougher than nails so had to marinate them to make them edible.  One day I though pressure cooking them would help, it didn't.

Oh boy, reading about all these delicious meals is making me hungry.

Since I have packed on some serious poundage during this virus, I am watching what I eat so, I am left with a green salad with a few apple slices and balsamic vinegar (instead of salad dressing), Brussel sprouts and a lean cuisine meal.
