Lynnj: Now why wasn't I ever previously aware of the correlation? Yes, pancake = a cake cooked in a pan! It's as simple as that!! (Thanks! Smile)

Wouldn't really be pancakes then.

I agree.

Actual pancakes only have a few ingredients, and I can't imagine that these would taste anything like actual pancakes.

Something different for sure, but I'll stick with the real thing. JMO!

Do you think one of those $1 bags of muffin mix would work?

I don't see why not, as long as you keep the liquid to dry ratio the same. Cake mixes are either regular price or on sale for $1.00 all the time here.

Posters who don't like the idea or the ingredients on this thread are welcome to move along and start their own thread with their own ideas of things to cook and ingredients to use.. I'll be curious to hear how these turn out from someone who tries this. I LOVE the waffle idea, and making large batches of waffles to freeze. And yes, this is the truest sense of a pancake, cooking a cake in a pan.

We almost needed the popcorn deer, huh?{#emotions_dlg.laugh}

Seriously, I see this as a cheap treat, not an every day staple. You can't buy a decent package of cookies for what this would cost to make. There is a recipe to make cake mix cookies too. You can spend a ton making cookies for the class or a kids party, even buying slice and bake.

I'll see if I can find the cookie recipe.

I tried Spice cake mix waffles last night! Froze several to pop into my toaster. Such a great idea. Just as good as Pop Tarts, IMO. On another thread, someone alerted us that today is National Strawberry Day. Wish I had a box of Strawberry Cake Mix in my pantry. I always wait for sales, so I'll have to check my supermarket ad for special prices.

You can't beat those $1 a box cake mixes. I always buy three or four, just to keep on hand. Relatives always check out my pantry, and when I have too many that I bought on sale, it's my guest gift to them, lol. Anyway, buying cakes at the bakery are very expensive around here, and, really, not as good as boxed cake mix cakes, IMO. I love baking. It's relaxing.

Banana Pancakes

Mix 2 eggs and 1 peeled banana in magic bullet until smooth. Can add a dash of cinnamon or sweetner or vanilla if you like. Cook as for regular pancakes on a non stick griddle sprayed with oil spray.

Makes 8 pancakes--delicious and no flour or sugar! This recipe can be halved-- use 1 egg and 1/2 banana.

I always knew that 'they' would (thankfully) come around regarding eggs. We learned way back in elementary school that eggs were the 'perfect food'. Because the lecithin (sp?) in eggs counteracts any cholesterol. The pendulum has swung back, fifty years later, lol. I always say that 'Time will tell, even though it might take 50 years'.
