Adore, do you make your own suvlaki?

Hope all is well, wondering if you have made your own stuffed grape leaves or do you purchase ready made? I have never found a tinned brand that the leaves aren't mushy.Thank you, blessings, Maryanne

Although I have never made suvlaki, I was drawn to this post because I am Armenian and even though we call it "sarma" I was raised on stuffed grape leaves. As my parents' generation has aged and many have passed, it is becoming a lost art in my family. But your post brought a smile to my face as I took a trip down memory lane! Thanks Keeper!

Keeper of the Koi,

Give me a few minutes for the souvlaki recipes and btw which type did you need Maryanne?...Chicken, fish, lamb, pork or beef?.... and I will post back{#emotions_dlg.rolleyes}.

For the grape leaves I stopped growing my own on a trestle because too much work, so now I buy the Orlando California grape leaves in the jar with the yellow lid. They come in small and large sizes and I use either one depending how many grape leaves I plan to make and serve.

Neither...why would you make that assumption ? Adore makes everything from scratch, it appears. Why would this be any different ? ETA---- I just saw her post...she even GREW her own grapes and, therefore, leaves . So my statement stands.....

Well not quite everything...I did make many things home made in the past, as did my family, but my husband and I travel abroad quite often, so I have stopped making some food products, and we resort to getting them from friends, or buying ready made.

They do sell kits to grow your own mushrooms at home, Adore........Smiley Happy ( only playing )

Thanks Adore I was looking for chicken or beef... Danky not so far fetched, I actually have 3 acres of wine grapes ,belonged to a vintner.. Asking because it seem like an odd response to a recipe request of someone who is obviously an accomplished homemaker.

Ouzo Marinated Greek Shrimp on a Skewer (no photo)

You can also add some scallops if you wish with green and red pepper slivers and small pearl onions...just marinate all of it before adding to the grill.

Instructions
  1. Coarsely chop the tomato and puree in a food processor. Alternatively, grate the unpeeled tomato along the coarse side of an upright hand grater, to get the same affect. Combine the tomato with the olive oil, basil, garlic, lemon zest, ouzo, and vinegar. Mix in the cayenne, to taste.
  2. Toss the shrimp in the marinade and let stand, covered and refrigerated, for one hour.
  3. Preheat the grill or barbecue.
  4. Divide the shrimp evenly among six or eight skewers. If using wooden skewers, soak them first in water to prevent them from burning.
  5. Grill the shrimp for 3-5 minutes, turning to cook on both sides. When the shrimp are bright pink, remove and serve.

Greek-Style Beef Kabobs (aka Souvlaki)
These are really easy to make and very delicious!
Serves: 6-8
Ingredients
For the kabobs:
  • 2-2.5 lbs. beef top round, cut into 1 ÂĽ inch cubes
  • ÂĽ cup olive oil
  • ÂĽ cup fresh lemon juice
  • 2 garlic cloves, minced
  • 2 Tablespoons fresh oregano, minced
  • 1½ teaspoons Kosher salt
  • Freshly ground pepper
  • A mixture of peppers, onions, tomatoes, or whatever vegetable you prefer cut into chunks (I used one red pepper, one green pepper, 2 peppers, half large red onion, about 8 grape tomatoes)
  • Tzatziki for dipping, if desired (this recipe or your favorite)
For the tzatziki:
  • 1 medium cucumber, peeled and finely shredded
  • 1 cup plain Greek yogurt
  • 1 clove garlic, crushed
  • ½ teaspoon Kosher salt
  • 2 teaspoons dried dill
  • 1 Tablespoon fresh lemon juice
  • Freshly ground black pepper
Instructions
For the kabobs:
  1. Place the beef cubes in a large plastic storage bag or shallow pan.
  2. Combine the olive oil, lemon juice, garlic, oregano, salt and pepper in a small bowl and pout over the beef.
  3. Seal the bag, pressing out any extra air, or cover the dish and marinate the beef for 2-4 hours, turning once or twice.
  4. Thread the beef cubes and vegetables onto skewers (see Note).
  5. Preheat your grill to medium high heat.
  6. Place the skewers on the grill, reduce to medium, and grill over direct medium heat for 8-10 minutes, turning once.
  7. Serve with tzatziki, hummus, pitas, rice, etc., as desired.
For the tzatziki:
  1. Combine all of the ingredients in a bowl and stir until thoroughly combined.
  2. If possible, let sit in the refrigerator for at least 30 minutes to allow flavors to develop.
Notes
If you are using wood/bamboo skewers, be sure to soak them in water for at least 30 minutes to keep them from burning.

SOME IMPORTANT INFORMATION WHEN CHOOSING SKEWERS:

ALL OF THE ABOVE CAN BE EITHER GRILLED OUTSIDE OR BAKED IN YOUR KITCHEN OVENS AT 375 DEGREES UNTIL DONE, AND DO CHECK THEM OFTEN SO THEY DO NOT BURN.

BTW I DO NOT USE WOODEN BAMBOO SKEWERS AS I DO NOT LIKE WOOD PIERCING ANYTHING I PLAN TO EAT DUE TO SPLINTERS WHICH MAY NOT BE SEEN WITH THE NAKED EYE, SO I HAVE 3 DIFFERENT SIZE STAINLESS STEEL METAL SKEWERS I USE, BOTH FOR THE OUTSIDE GRILL, AND SMOKER, AND FOR INSIDE OF THE OVEN AND BROILER.
