I love Montery Jack and Colby.  I also love aged parmesian on a salad with Paul Newman's Family Italian dressing.

 

I like most cheeses, I just don't eat a lot of cheese.

Every New Year's eve we get our favorite--  it's a combo cheese with both Double Gloucester and Stilton.  You therefore get both smooth cheese and the sharpness of a blue cheese in one bite.  Our local cheese shop carries it, and it's a bit expensive so we reserve for special occasions like New Year's, along with crisp water crackers, some kind of berry-infused ginger ale, nuts and yes, chips.

 

I have a serious salt craving...

Never met a cheese I didn't like except I'm not overly fond of Swiss.  I love a good PepperJack cheese, or better yet, a Habanero Jack Cheese.
